Taco Soup

I don't know if any of you have heard of this recipe or not but it is extremely simple and my family really likes it. I thought I would share it with everyone at MyLot. Taco Soup Ingredients: 1 can kernel corn 1 can chili hot beans 1 can dark kidney beans 1 can hominey 1 can Rotel tomatoes (I use the mild, your preference) 1 can regular tomatoes Minced onion Mix all the ingredients together and let them simmer on the stove until done. I prefer the slow cooker myself, though, because I don't have to constantly watch it. I usually fix this on Wednesday nights since it is church night and makes it easier on all of us. That sounds delicious and I love finding new recipes that mightbecome staples. This one looks like it could be a hit. The ony thing I might have trouble getting is 'hominey'. I'm not quite sure what that is?

Oops! I made a typo! That should have been spelled hominy, sorry about that. If I'm not mistaken hominy is another type of corn. I've had it explained to me before but it has been a long time so I'm not totally sure and I don't want to tell you wrong. Some people don't like it but with us it seems to add a little bit of flavor to the soup. You don't have to add it if you don't want.

I like this recipe, though with my tastes I know I will doctor it up and make a couple changes. I prefer black beans over the kidney beans so that is one change. I like spicy so would use the tomatoes with green chilis or jalapenoes. Also I might try it with some taco seasoning I have. One other idea I had, though I would wait for this until I saw and tasted it first, is rice. I like to take any recipe and do it by the book first time and from there make it my own with variations that fit my tastes.

This sounds like a nice easy recipe. I will be sure to try making it with my daughter since I am teaching her how to cook. Thank you for sharing it.

Yes, it is very simple. That is the main thing I like about it. I have never been good at cooking from scratch. I wish I could though.
