I love to cook, as most of you know. I have made Thanksgiving dinner before but I have a few friends that have told me I might either be in over my head or need help. There will either be three or four of us so I do not think this will push my limits or stress me out.

Turkey bre*st with skin (none of us are big dark meat eaters)
Mashed sweet potatoes (we can live without the marshmallows)
Fresh cranberry sauce
Cornbread stuffing
Green beans or broccoli with slivered almonds
Dinner rolls
Gravy
My mom is bringing dessert.

So do you think I am getting in over my head? Is there anything you would leave out? Anything I should add?

How do you have Thanksgiving without cranberry sauce? I cannot stand the canned kind though and it only takes 5 minutes to make the fresh.

Yeah no leaving out stuffing either.

I don't think that is too much for one person to do. so no I don't think you are getting in over your head. It sounds like a pretty good menu to me. There will be about 12 of us here and I am making:

For appetizers:
A relish tray
spinach dip
shrimp dip

For dinner:
Turkey
Stuffing
gravy
mashed potatoes
mashed sweet potatoes
green bean casserole
swiss vegetable medley
cranberry sauce
My mom is making rolls

For dessert:
pumpkin pie
pecan pie

Oh, not that will be all me. I love to cook and bake, so it is fun for me. I will make the appetizers the night before and the pies early in the morning of Thanksgiving and the rest while the turkey is cooking.

Well, since my mom broke her wrist I guess I get to do rolls too. I also decided to add a loaf of cranberry nut bread to the desert lineup.

I think that sounds like a great Thanksgiving feast! I don't think your in over your head, I know you can do it! Please let us know how it turned out! I have never had cornbread stuffing so you'll have to save some for me please!?!

I don't think you are in over your head at all! That seems like a perfect meal for 3-4 people. You should see how much my mom makes!! My grandma and aunt also make a couple things so that she isn't bearing all of the burden. But we end up with turkey, mashed potatoes, sweet potatoes, green beans, broccoli something or other, stuffing, cranberry sauce, rolls, gravy, pumpkin pie...and I KNOW I am missing a few things!! And she cooks for more than 10 people!!
As long as you are feeling too sressed you will be fine! If you do start to feel stressed just ask for some help! Good luck- all this reading about food is making me want some!!!

It is good that she has help so that she is overwhelmed about making the meal. I know that if I was making it for more then just a few I would ask for someone to make a dish or two but why bother with this amount? My family are cookers and bakers so we all tend to make more then we ever really need just in case. My grandmother also said "better to plan for 2 more then 2 less."

If you want to make the trek all the way to NY just for a meal by all means I will not stop you. I do not think it is worth all that traveling even if you are not much of a cook yourself though. Doggy bag for Wolfie it is

Hi razcal.Nope i dont think your getting way over your head.There is a secret to help it go smoother that i learnt maybe you already know this.Alot can be made the day before,cooked halfway and then fully cooked that day when your serving it like the cornbread beans and brocoli and the dinner rolls and the cranbery sauce.You just have to heat it back up.We make the dressing the day before,rolls,cornbread and just heat it up the next day just before eating.The dressing can be cooked half-way and fully cooked the next day on the top rack of the oven over the turkey.The cranberry sauce if its to be served warm just put it in a pot and heat on low just to warm it up,saving time and helping things run smooth with no hassles and running around making sure not to forget things.Relaxation in the kitchen helps the cook make perfect meals with no glitches,hehe.Im all about prepring the day before a get together meal.

Thank you=} I do all the chopping up of vegetables, making the cornbread and all the other prep things the night before. I just could not make the cranberry sauce right before we sat down to eat. That is one thing my grandmother did and it was so much fun to watch. Yes, I am grown now but there is just something about doing that right before the food is served.

I know what you mean:)My grand-mother made the dinner roles just before we dug in.The smell of them hot from the oven and on a plate with the steam and melting butter coming towards the table got my tastebuds flowing,haha.I miss that!

I see that you are planning on doing quite a bit the day before. I always try to do that so I won't be so tired when it comes time to serve the meal. I'm planning on putting my grandkids to work with some of it. we will be having 5 for dinner and since it will be their friends they can certianly help. I will have trouble peeling the potatoes so they get to do that for me.

It is the only way no matter how many I am cooking for. It is one of the "tricks" my grand mother taught all of us along the way of helping her with the things like peeling potatoes. Enjoy!

We eat the cooked cranberry sauce, and it makes ahead really well. In fact, after last year, my brother has assigned me to bring that, plus whatever else I want to bring. We will have anywhere from twenty to thirty people. We do this every year.

You can pull it off! I would skip on the fresh cranberry sauce though. I made some last year and it was quite tart. Nobody ate it.
