I Have Had It With Low Carbs!!!  |

Okay, so I don't do low carbs, but my mother-in-law does. I do the cooking in our household, so I try to take her dietary preferences into consideration, serving whole grain rice and wheat rolls on the side so that she can opt to have less of them. Well, tonight was the second time I make a soup that was incredibly healthy, no meat, low fat - but, OMG, CARBS! The first was a hot and sour soup (thanks to a MyLot friend for that one) that had tofu in it. "Tofu is low in calories, contains beneficial amounts of iron (especially important for women of child bearing age) and has no cholesterol...[and] may also be high in calcium...and magnesium." Tofu has all of the benefits of red meat, without the fat, but, tofu has CARBS. Then, tonight was even worse. I made a lentil tomato soup. It had carrots: "Carrots are rich in dietary fibre, antioxidants, and minerals, as well as vitamin A. Lack of Vitamin A can cause poor vision, including night vision, and vision can be restored by adding Vitamin A back into the diet." She has astigmatism and other vision problems, and still wouldn't eat the soup because it has CARROTS and carrots have CARBS!! She can eat a burger or a slab of steak or ground beef, but tofu and carrots are OUT because they have CARBS! There is a reason why the low carb diet is bad for your heart and health. Don't get me wrong, I love and respect my MIL, but this is one issue that I just don't get. So, any opinions out there on low carb dieting? Any stories to share?

People are scared of the term "carbs" because they associate it with most simple carbs like sugar, white flour, white rice, etc. Fruits are also simple carbs but they have vitamins and fibre and other good things. The kind of carbs you need are some fruits, vegetables, and complex carbs like whole grains but all in moderation. You need these carbs for energy, if you eat too much protein and very few carbs you could end up with other complications, kidney stones being one of them. Just tell her, not all carbs are evil and the ones that are good you MUST have in moderation!

When I make grains, they are always whole grain or multi-grain: brown rice (made with vegetable broth instead of butter and salt), wheat bread or rolls, oatmeal, etc. She prefers white bread, so thinks of carbs in that light. As for telling her anything, she pays all of the bills while my husband and I go to school, so if a woman as intelligent as she can still think that tofu and carrots are bad, I'll just have to keep making carbs separate.

Barbietre (335) | 3 months ago | OMG what non truth, that makes me SOOOOO angry. People research before you spout anti low carb stuff! You body can convert to burning protein with NO side effects. There are NO diseases related to lack of carbs but thousands from too many! Kidney stones are not from eating too much protein. Email me and I will send you to some real research not the junk you read in the papers. I have been eating LC for 5 years and I look 10 years younger tha most people, have no need for afternoon naps, no energy slumps. My treigylcerides went from 225 to 74. Low fat, high sugar will kill you.

SomethingGood332 (1345) | 6 months ago | I think they are ridiculous - and she is always complaining about lack of energy. Well, it's because you won't even get the carbs from a simple carrot. Granted, she does go for lean meat choices, but completely cutting carbs out of your diet isn't going to do a thing for your energy levels - except make them plummet. Thank for the response.

If low carb diets don't work why is it I went from 200 to 380 pounds had my cholesterol shoot through the roof and develop type two diabetes while on on a 2000 calorie a day low fat diet with daily exercise over a matter of a few years. But in a matter of months have gone from 380 to 320 dropped my cholesterol by half, raised the ratio of good to bad into an acceptable ratio, brought my blood sugars under control to a point where I am coming off insulin, and last but not least eat 3000 calories a day? Please get the AMA to explain that. or better yet why don't some of you self righteous sheep who don't really know anything but what you have been told or dabbled with explain it? Furthermore there is a difference between low carbs and no carbs. And fruits and vegetables are not off the table, you just have to be picky which ones you eat. For the records I had bacon and eggs for breakfast. I had raw broccoli, a few baby carrots, and some boiled eggs for a snack. Lunch I had a couple of burgers broiled with salsa and cheese on top. I had boiled eggs for a snack. I had pork rinds for another snack. Lastly I just ate a 12 ounce rib eye, a spinach salad with boiled eggs, bacon and a nice dressing Later on I will have strawberries with real whipped cream. Before I go to bed I will have a Maker's Mark night cap. At the end of the week I will weigh a couple of pounds less than I did yesterday. How is your diet and weight loss going?

I am around the medical field and I have heard time and time again about how BAD the adkins diet is for you. All that red meat, bacon, eggs and your cholesterol is going down??? I find that hard to believe. I guess you will learn when you die as my uncle did from the Adkins diet- YEP that's right the Adkins diet led to a massive heart attack that put him on life support- I guess when that happens to you- you will realize how MISINFORMED YOU really are. But then again it won't matter because you will have already met your maker.. Do some research! By the way, I exercise and eat right- I don't have weight loss issues- I take care of myself.

For the record, Brad, I have done the research - it's called pre-med, you should try it sometime - I got an intimate view of the insides of a variety of people. I saw autopsy results for many low-carbers. Sure, they were a slim, but their hearts gave up trying to fight through all of the build-up in their arteries. I never claimed that a low-carb diet doesn't help you lose weight, it does, but it does nothing for the overall health of your body. A low-fat diet doesn't do you a d@mn bit of good if you don't watch how much you are eating, as well as your sodium intake (many low fat and fat free foods make up the flavor by adding sodium). I have lost more weight than my MIL, and in less time, all things equal except for the amount of carbs we eat. Also, I have more energy, and though I take immunosuppressants for an unrelated illness, I have had fewer illnesses than she. My pregnancy was difficult and I was bedridden, so I gained a lot of weight during that time, but I am only a 2 sizes shy of my pre-pregnancy size. My skin and hair in good condition, my cholesterol and blood sugar are excellent, I have all of the nutrients my body needs, and I don't feel deprived. Perhaps YOU are so blinded by a few pounds on a scale that you don't see the bigger picture, that you have lost years of life along with weight. Check you facts. And while you are at it, check the autopsy report for Dr. Atkins himself. (Sorry that this all had to be on your comment, Skinny, but I just couldn't leave that one alone).

This diet is dangerous and is a really bad subject for me and Adkins is a no carb at first and a low carb diet later so you take away from your body and give it back?? What about shock to the system... See I go off on it again...I'm a 4th year nursing student and I would think I would have seen a doctor somewhere order someone to eat like this if it was a good thing. Thanks for adding all that info. too it was very interesting!:)

In fact recent arcehological digs show people only started to get heart disease when carbs were introduced into society as a mainstay of the diet. Native eskimos eat mostly fat and have no heart disease. Bacon is only bad when it is filled with nitrates. I remember when my grandmother wanted to loose weigh she said I have to cut out the bread and desserts.Remember the diet playe from years ago? burger no bun, cottage cheese with lettuce and a tomato with a fruit. Oh and I eat carrots, veggies are never the problem.

I know a bunch of doctors and they all firmly believe that diet will kill you.I would tell you to ask Dr. Atkins but he had a heart attack and died. Hmmm? Also, veggies are a problem with the first level of the Atkins diet.

4. gxnfly (894) | 6 months ago | Oh,my god,it sounds to me that your mother-in-law go to extremes about carbs.Carbs are quite beneficial to our hear health.Carb deficiency can cause health problems.Try to reanson your mother-in-low to have carbs in moderation. About low carb dieting,I suggest you eat frozen tofu.You can freeze the mornal tofu in the frige,then unfreeze it and cook it in anyway your want.After freezing there is little carb left in it,but all the other beneficial are left as before.

I don't do low carb dieting because of the health problems, but I will do that for next time so that she won't have a reason to pick the tofu out of the soup. It really gets to me how I plan healthy meals, very low in fat and calories but high in nutrients, then she won't eat it because it has carrots. I love healthy food, and my husband will at it if I am the one who cooks it, but it seems like the harder I try, the more she doesn't want what I fix.

I don't eat potatoes often, and I have an all around healthy diet. I have portion control so that I can lose weight. But, this kind of crazy dieting is just beyond me. Oh, btw, I have lost more weight than she has since she started low carb dieting.

I have always eaten carbs and never been grossly overweight except after I have had a baby. But I still managed to lose 30 pounds eating my breads and cereals and carrots;) so I will continue to do so.

SomethingGood332 (1345) | 6 months ago | Before having my baby, I had lost 75 lbs by reducing the amount I ate but still having carbs - I had whole wheat toast with olive oil spread or oatmeal for breakfast, and some sort of rice and vegetables with protein (sometimes meat, but not always) for dinner and ate small meals throughout the day. Since having the baby, I have lost weight the same way. MIL and I went on official diets at about the same time (she started 2 wks before me) and I have lost more weight than she has, I have more energy, and I don't feel deprived. I have more weight to lose, but I am already ahead. I won't cut carbs; it's just crazy to me, but to her, all carbs are the enemy (and she wonders why she is craving bread and popcorn lately).

7. drannhh (4574) | 6 months ago | I agree that we need carbs to live and maybe going without them is what is making her so grouchy, but it is heartbreaking that when you make such nice healthy food she feels the need to make a scene about it. Forgive me for saying what I think, but it seems there is something more going on with her, such as jealousy, and it sounds like it could end up being a lose-lose situation having her in the same household. Do you think she feels threatened by the fact that you have taken over a role that used to be hers? Do you think she would prefer to do the cooking? Could that be part of the problem? Probably way off base, but an idea.

SomethingGood332 (1345) | 6 months ago | Little off the mark with that one - she actually hates to cook. When we were all going to be living together, we divvied up the chores. I got most of the cooking b/c she hates to come in from work and cook, whereas I love planning out meals, then making lunches from those meals, and sending everyone on their way with healthy meals (I even check the weather and plan meals appropriately - cold misty days get chowder; warm, sunny days may have BBQ, etc.). She does cook an occasional meal on the weekends, usu. a breakfast, but for the most part, it was a chore that she was glad to give up. It does hurt my feelings a little, though, when foods that are so healthy turn out to have carbs, so she doesn't eat them. I have to be very careful about what I eat b/c of my MS, so I have learned to make healthy, delicious meals that everyone can enjoy. I know she loves anything with tomatoes, so I tried the soup recipe because it had plenty of tomatoes, and smelled great, but she still didn't eat it. She didn't really make a scene, she was polite about it, but I was a bit crestfallen (she had actually already eaten dinner, so I offered her some for lunch to take to work, and that was when she told me that she better not, since carrots have carbs). I just get really annoyed with the effort.

I don't cook and I don't know what has a carb and what doesn't.I would have tried and then given up taking carbs out.Mom would either have to tell me Exactly what to cook or cook it herself.I know I wouldn't be on her diet so there would have to be two different set of meals.As you can tell I don't follow any diet. And whenever the Food Nazis talk about what You should have in your diet and what you shouldn't, I feel like I should have died Years ago. I don't care about fat or carbs. I don't eat vegetables or fish and I don't drink milk or water.Pizza and soda are my favorites.

It just baffles me that something as healthy as carrots is off-limits b/c of the carbs. As for tofu, it is an acquired taste (it really doesn't taste like anything, just kind of takes the flavor of whatever it is cooked in, but it is a weird texture), so I could understand if she just didn't like it, but the carb thing threw me for a loop.

Cheesecake is def. worth it (one of my fav. foods), but butter isn't (I don't like the flavor of butter - I know, weird). I just opt for a smaller piece. I hate the mindless eating just to be eating, esp. when the food isn't even good.

SomethingGood332 (1345) | 6 months ago | I was at a family function once and my grandfather, who runs an ice cream truck, came by with his truck and gave everyone whatever they wanted. I don't remember if I had anything, but my nephew got a really messy Popsicle. He at about half of it, then handed it to my mother and went off to play. My mom started eating it, and I asked her if it was any good, and she said, "No". I asked why she was still eating it, and she said that it was melting. I stood up, reached out my hand for it, and walked it across the yard to the trashcan. My mom is incredibly overweight, but instead of walking a few feet to throw this frozen sugar-dye away, she was just eating it! I have always made an effort not to be like that.

10. razcal2267 (7466) | 6 months ago | It sounds like your MIL is on the first phase of the Atkins diet. If she is not on the first stage/phase of a diet the she needs to eat carbs. everyone does! One carrot every so often is not going to hurt. I can relate because one of the two people I live with is a diabetic and she tried the low carb/no carb thing for awhile. Yes, she did lose a major amount of weight but she also got very sick.

I am tired from caring for a baby, but I have the energy I need to do it, and I barely get sick, and I have multiple sclerosis, and take immunosuppressants for it (that should mean that I get sick constantly with every little bug that comes through, but I don't, because I get the vitamins the body needs).
