I am so tired tonight so I'm glad I bought a really easy dinner tonight, tonights dinner is going to be english muffin pizzas...

the store had them on sale yesterday so I grabbed 2 packs and will get some cheese, we have lunch meats, and some sausage so the kids can make some toppings,

Yeah I can have an easy dinner tonight,

Last night we had hot dogs and chips and after being up to almost 4am for multiple reasons I am sooo glad that I planned for a second day of easy dinner.

Also, shephard's pie is easy?
Just gorund hanburger fried up wth some corn tosed in and mashed potatos over the top, he bake it a bit.
EASY and not expensive to make at home!

Shepard's pie is really easy to make. I add a few more veggies to mine though and my potatoes are cheesy potatoes. It is always a big hit with my kids and cheap to make.

For a tex-mex twist, add a can of chili beans in sauce with the corn and hamburger. Then add shredded colby-jack cheese and a bit of salsa to the mashed potatoes.

I am not sure yet about us but we might have hamburger helper and rolls for dinner tonight. Your dinner sounds really good and fun to make espeically getting the kids involved. I do find that in the summer time the easier and lighter the meals the better.

I have not done English muffin pizzas if forever. I bought 4 packages of English muffins the other day at the store and threw them in the freezer. That sounds like a good thing to let my son make himself for lunch today. He loves pizza in any form.

Not only are they easy to make they are fun to eat and on top of that they can also be healthy.

Use a whole-wheat english muffin with a tomato slice (or make your own sauce if you need sauce and cut way back on the salt (use rock salt/sea salt/etc...) and then a piece of mozzerella right over the top.

Of course between that you can add veggies like peppers and onions...

Dang I think I am going to have to get one of those for myself!

Everyday is an easy tea for me! I dont have the time to be cooking complicated or long meals, otherwise we would not be eating until 8pm. My daughter likes to be in bed by 7pm so she would not be amused with that plan!

I have never heard of English muffin pizzas but they do sound interesting and I am sure that your kids will make them lovely with their toppings!Enjoy!

Since it is summertime it is definitely time for easy dinners. I have had a couple of sleepless nights, or rather just short nights. I have a stuffy head and headache. I think I have a virus. Some finance things, etc. We will have sandwiches at lunch and then I am supposed to go OTE with clients tonight. We also have some wonderful barbecued brisket for tomorrow. I really do not have to cook much or plan much, but it is fun to do .

Excellent alternative! I wish I could do that - my mother likes pizza, but she's "old school" enough that "new fangled" doesn't go over well with her. Do you toast your muffins before putting the sauce on them? I've made pizza with tortillas, too. Homestyle work best for them, although it's a bit harder to eat than the muffins.

Speaking of tortillas, I think I'll be making some chicken and dumplings using tortilla strips for the flat dumplings. I'm really in the mood for something "doughy"!

Just wanted to add - I made the chicken and dumplings using a package of tortillas that I sliced into strips and dropped into the broth. I have NEVER been able to make them from scratch as good as those came out!! Even my mother, who used to make enough to last a week, had three helpings!! I will be making this again with tortillas - far easier and much cheaper than from scratch! Yum!

I had a restless nigh and hardly got much sleep so doing an easy dinner to . I fried up some steak and saved . Later, I will make a steak pizza . I have had english muffin pizza's too and they are good, and everyone seems to enjoy them . Nice little different treat thumbup
