how do YOU cook your lamb?  email this discussion to a friend?

Hi peeps, this question is to the meat eaters...well it's Sunday again, it's roast dinner day here, so i have decided to cook a different joint of meat instead of beef, pork or chicken, i decided to do a leg of lamb instead, so here i am in the kitchen when my ever so lovely partner poked in and said i was doing it wrong, what i did was i seasoned it with lamb seasoning and rosemary and added a little bit of salt to the skin to make it crisp, he said it looked good but would prefer it if i added cloves, i am not keen on cloves so i decided to leave them out, he insisted that cloves would give it that extra flavour, do anyone of you use cloves on lamb?, so if anyone here has any other tips on how to cook the perfect lamb joint i would truly appreciate it...how do you do yours?

That's definitely a personal choice. My guy hates cloves so I never put them on lamb that I'm cooking. My cooking mixture is usually finely chopped garlic, basil, oregano, parsley, thyme, rosemary, a bit of nutmeg, salt, and cayenne pepper to give it a bit of zip all mixed up in oil.

I don't think there's any way to cook lamb wrong, any I don't really think that cloves do all that much for the meat. You could always hammer them into the portion of the meat so that your partner is happy.

Basically, cloves aren't neccessary. happy

yes i agree that cloves are useless, they don't taste very nice...i like the ingredients that you use so i'm going to note that and use it the next time i do lamb, it sounds really tasty...thankyou....my partner put some clove on the other side of the lamb so he could have some...lol...the other end had none which was better for me, i really don't like cloves...

How lovely, I could smell it from here. I do my lamb exactly like yours,but you can rub some mustard one it, the gloves goes very well with pork not lamb, if my husband say that to me I'll tell him to do it himself hehe,.My husband won't cook can't cook. Its clouding over at my end threaning rain, how about your end. I live in W Sussex .

i KNEW it...i told him that cloves are for pork, but would he have it? NO, he insisted that cloves are used in lamb...wait till he gets home...LOL...you have just settled an argument for me, so when he gets home from work, i'm gonna show him this thread...lol...thankyou....the lamb tasted lovely, we had a nice roast dinner with roasted potatoes and all the trimmings, but afterwards the 2 of us were laying on the couch regretting it...LOL....our bellies were nice and round....happy

it's been lovely here today, very warm with hardly any wind, just a nice breeze, it's still nice now and it's 10.51pm here in Liverpool, tomorrow we get more rain till Wednesday then we get sunshine on Thursday, the weather here has a mind of it's own, i wish it would stay sunny because i like to do my gardening...

I love lamb, but I have never cooked it. One of my former lovers used to cook it for dinner from time to time when I was over at her place. I don't know how she would cook it, but it was really good.

My wife doesn't like lamb, so she never cooks it. She doesn't know how to cook it, or I would get her to cook it for me and cook something else for herself. I wish I knew how to cook it, because I would cook it for myself sometimes, but I have never tried it. Lamb is too expensive to mess up trying to cook it and not be able to eat it. I may try it do it eventually, though.

Yummmmmmm, Lamb is my favourite so I'm on my way over LOL, but only if you leave the cloves out. I just cook mine on a really slow heat so it is nice and tender and don't add anything but will have with minted gravy and I thoroughly enjoy. Why cook with cloves if youre not that keen on them it would ruin the meal for you. Ellie :D

well i cooked it with some rosemary and some seasoning, also some salt to make the skin crisy, it cooked perfect, i still have some left so i will use that for sarnies later on, he wanted cloves, i didn't so i left them out, i don't see the point in cooking them with lamb, it does spoil it...actually it was very nice...lol...happy

I've never cooked lamb but I think I would either put it in the crockpot or broil it. Not sure, though. I'd have to look up some recipes!

excellent dish:

6 round bone lamb chops,1 can condensed consomme soup,1/2 c. water,2 tsp. soy sauce,1 lg. clove garlic, minced,Generous dash of mace,1/2 c. onion, sliced

Trim excess fat from chops and score edges. In two 10 inch skillets, brown chops in olive oil, then pour off excess fat. Stir in consomme, water, soy sauce, garlic, mace, and onion. Cover and cook over low heat for 25 minutes. Mix 1/4 cup water with 2 tablespoons cornstarch until smooth. Remove chops and blend cornstarch mixture into sauce in pan, stirring until thickened. Add chops back into pan, add 1 cup cooked French style green beans on top, cover and heat. Serve with rice. Serves 4-6. WINE SELECTION: Red Bordeaux or Cabernet Sauvignon

I would use rosemary on the lamb, but cloves also would work, I think. We love cloves when we cook ox tails or a tongue of beef in the pressure cooker. If I had mutton I would use the pressure cooker, but a nice rack of lamb would go in our NuWave oven which combines convection and infrared to make the meat very juice inside, but nicely browned on the outside without all the fat dripping out into the base, away from the food. It also cooks that kind of meat in about half the usual time, maybe less since foods can be frozen rock solid when you put them in and they come out just delicious. I've had convection ovens before but we just started using this tabletop technology this summer and I am so impressed with it.

WOW Drannhh, that chicken looks so yummy, i can never get mine to look that good, i use the old eye level gas cooker that i have had since the stone age...LOL...it still cooks very well but i am probably due to buy a new cooker soon, this one seems to be on it's lazzies, the lamb i cooked yesterday was perfect with out the cloves, i put a few in one end of the lamb for mister tatty, so he could have them but the smell was knocking me sick, i really cannot stand them at all...food was delicious though....thankyou....happy

Hey there tattylashes, I think the best recipe for lamb is steaming it and then making lamb curry. I like Indian spices and dishes. It's really filling and it is also delicious and aromatic. I think other ways is to grill it. Lamb is really nice. You make me wanna eat.. LOL

I love to eat and cook lamb. Unfortunately my husband refuses to eat it because he was raised with cute little lambs so I don't even attempt it anymore. The only problem most people have with it is the odor, I don't mind it, in fact I love it because I know whats cooking but that's besides the point, here is how I prepare mine.

Mint. Lot's and lots of mint, fresh or dry it's how lamb is prepared in the Mediterranean. I smear mine in olive oil, mint and I use an all purpose salt seasoning called Vegeta. Vegeta contains MSG so it's not recommended for people with allergy. I also use fresh garlic or garlic powder. I slice potatoes and bake those with the lamb, slow cook on 325f for about 3 hours, depending on the size of the leg. I also prepare lamb chops with mint but I like those cooked on a frying pan.

Err, go to the farm, get a machine gun with me as I am not accurate, then shoot at will. If I manage to hit a lamb, ok, then I go to the local hotel, remove the bullets and give it to the chef to cook it for me.
