Those all produce different forms of heat. Once we were dining at the house of some acquaintances, though, and they "cooked" some fish without heat, I think, by putting lemon juice and other things in a sauce that they said cooked the fish. They called the dish ceviche. Their cat liked it a lot, though, and as s/he jumped up on the counter and was sniffing if before it was served, hubby and I were a bit reluctant to try any.
