Leftovers - Today I made Sausage casserole with mashed potato

It was cold here today and I had lots of those miniture cocktail sausages left over from Christmas so I put them in the slow cooker with a lot of bits of mixed veg that I had left over, added a tin of baked beans some sock and let in cook real slow. When I got back from the school run I peeled, cooked and mashed some potatoes and hen dished up, my son said the gravy from the casserole was the best he had ever tasted and we have enough left over for tomorrow and it will thicken so will use as a topping for jacket potatoes. Have you any thrown together from leftover recipes that have worked well to share? Huggles. Ellie :D

Wow, that sounds so yummy! ANway, today also hubby and I just eat a leftover from the pasta we have made yesterday, it was just a little warm up and ready to eat! LOL!
There are moment when I have leftover rice, so I will fry it with carrots, cabbage and saute either chicken or meat to be slice and mix it all! LOL! [/i]

hahhahaa...I agree with you..I was reading all the post here and can't help to imagine all those foods that they are describing! Makes me go to the kitchen and grab some food!@ Lol! Enjoy friend!

.well thats what i did during lunch time.we had left over from yesterday a roasted meat.so what i did was i sliced i a small pieces,fried it with union then we eat it with baguette and white sause.the white sauce we call it!zasiki" this sytle of food is turkey´s food called! "Doner".so our left over is not wasted.

I could never recreate any of my leftover 'specials'. Casseroles, soups and bubble adn squeak type dishes are ideal for using up odds and sods. If you try to do them again though, they just never seem to come out the same! Mind you, perhaps it's because I don't add socks to mine! It's obviously your secret ingredient :-)

i never thrown mix ingredients like you did, cause i'm afraid it will taste terrible

Shame on you, naw but it does sound good... I was gonna ask you where you are from to see whether it would be worth my while to make my way to your place.
actually, I can enjoy listening to others enjoy their food, unfortunately I haven't been feeling too well myself and as an added problem I have difficulty digesting food.
but, such is life.... The upside is that I can eat all of the chocolate and fattening foods I want because I need the extra calories.... Is definitely always an upside to anything and everything!

Hi Wheel, Well I am in the Uk and this discussion has backfired on me because now I am hungry again and have just made ham and eggs on toast. Sorry to hear that you have been poorly but yes the upside of that is to be able to eat los of chocolates, always an uplifter. Huggles. Ellie :D

That does sound very yummy...nutritious and warming as well.
Usually I cook enough for 2 or 3 meals for myself. Sometimes I freeze a potion or else I will leave it in the fridge for the next day. I like it when I have 3 or 4 choices of frozen meals and I don't have to cook.

Isn't it funny how more often then not alot of things that you cook taste so much better the next day like casserole, soup or stews. So yes we have left overs all the time and one of my favorites is after you have a roast and you have left over meat, the next day I make it in to a sheperds pie with gravy and potato on top.

Hi Msmell, Oh it did taste so much better tonight, I guess it is because the flavours have more time to soak into the meat and gravy and it seems to thicken also. I love shepherds pie, I quite often grate some cheese on top of the potato towards the end of cooking also which I enjoy. Huggles. Ellie :D

Hello ellie,
all that sound so good. What are jacket potatoes? What I've done with roast beef from a can, is put garlic, onions, tomatoe, cilantro, seasoning and fry everything together and eat it with corn tortillas. and I'll add a couple of green chiles. I know the slower cookers are the best. left over mashed potatoes make very good tacos.

[i]oh, you see your jacket potatoes are our baked potatoes. funny how we have the same foods but different meaning. What I also do is have a soup, Ramen noodles, I'll add all kinds of veggies to it, put my seasoning and there I have more than just noodles. You're getting everyone hungry, and with that I'm making me some soup. It's kind of cold and the soup will feel good.[/i]

Hi Kallegirl, Jacket potatoes are potatoes that are cooked in the oven in their skins and then cut open and buter and a topping put onto them. We called tinned beef corned beef and I oftne make a corned beef has which is similar to what you are saying but mashed potato is put on top and then put into oven for a while to crisp. Huggles. Hurmmm... here in my country where the staple food is rice it is really easy. There's always a lot of rice not eaten and usually we eat it with maybe chicken and vegetables and the best thing to do with these leftovers is to just put them in a frying pan and then put some cooking oil and just fry them all togeter and putting some sauce to make it tastier. ^^ Good recipe from you, btw.

He went out to Thailand for a couple of months with friends and was introduced to her through a mutual friend, they hit it off and courted for years and have been happily married for a few years now with her now living in UK with him. She is delightful and it is lovely to see them both so happy. They are the same age with similar interests and she loves me cos I like hot spicy food LOL. Huggles. Ellie :D

Yes... we do it all the time cause cold rice is the best thing to make fried rice. Wow, I never knew you had a Thai sister-in-law, Ellie. :D How did your brother met this girl? (Just curious)

Hi ellie,
That sound so tasty, but I don't think a sock would be very nice in your casserole, I would add some stock that will be better eh, hehehe. I often throw some left overs and make a good casseroles sometimes and yes it does go far. Love and huggles.

I just thought it was so funny, maybe ellie put it in to add more flavour or colouring, do try it with the dirty one Scoop, it ill add more than flavouring, it will just taste like old sock. LOL

I throw everything together like that, but I do not remember what they are because it is never the same it is whatever I have I just throw together and it usually always works well.

That sound so good. The last thing I made from leftover was last week I took left over taco meat and made chili out of it and it was better than my normal chili I guess because of the spices in the taco meat. I will be doing this a lot from now on.

I am not a cook, so no I guess I really don't have any of the thrown together type things. We usually just eat the meat if the sides have already been eaten. It's funny how the sides are always the first to be eaten and then all the meat, I guess it's because once all the sides are gone we have to eat all the left over, close to the bone, meat (like from ham).

Hi Lazzeebee, I put it on for about four hours in total and it was far yummier tonight as had rested and thickened and I just warmed up again. A slow cooker is great for cheaper cuts of meat as it is always so tender after being cooked that way. Huggles. Ellie :D
