When you submit a video, it's converted into a .flv file (flash) to use in their video player. Some video formats can convert quickly, some not so quick. Some formats use lossy compression, which means that data is lost in the compression and conversion process.. this is why some videos on youtube look really grainy and pixelated. It's best if you stay away from an extremely lossy format if you still want the picture quality to be high. If the format that you want to use isn't supported, I'm fairly sure you'll get a message saying so when you try to upload it.
Just curious what format you plan on uploading? You could always do a google search of that format+"youtube" - that might bring up some helpful results. The internet knows everything!! Haha.:)
