me, well i can laugh and say that i could make a mess by baking cakes, i remember at school, my domestic science teacher wanted us to make a simple victoria sponge cake with butter cream and jam in the middle, mine turned out like a rock cake, literally, i took it home and my nanna ate some, then my aunt ate some and they both had that whincey look on their faces, i think they were being kind by saying it was nice, but i could tell that it was a mess and not nice, the next day my nanna showed me how to make a proper cake, hers was so soft and spongy but with mine we could have used it to sole our shoes, over the years my baking became somewhat tolerable but not palateable, even to this day i don't know what i am doing wrong, but my cakes always turn out heavy and tasteless, so how are you with baking cakes and have you made a complete disater, or maybe a masterpiece?

tattylashes (4295) | 8 months ago | oh i make excellent pies, i couls make any pie and make my own pastry but makine cakes is a whole different ball game, i bet them cakes you made were funny at the time, i have tried so much to get the "prefect" cake but it just didn't work out the way i wanted them to, my nanna used to make mixed fruit cake and they always turned out like they were bought out of the shop, but mione tasted like someone had trodden on them in rubber wellies, i guess the instant mix will do me for now, it's my friends birthday next week and i want to make him a cake for his birthday, so i think i will buy cake mix instead, at least if it goes wrong i cannot blame myself...lol....

One of these days, we should share pie recipes. I'm hoping to get enough peaches from my trees this year to be able to make a peach pie or cobbler.
Oh! My lilacs are in full bloom (although VERY wet from all the rain). I'm keeping a close eye on them to see when they start wilting because I'll place bags over some of the blossoms to collect the seeds before the birds do. You're gonna get those seeds soon... it's a promise!

tattylashes (4295) | 8 months ago | yeah we can blame the manufactoreres, oh thanks mental, i would love them lilacs, i have just ordered some lily of the valley bulbs which should be here any day now, maybe today even, also i sent off for some night scented stock, i love that stuff, it smells so nice, at the mo i have runner beans growing and i think i better get them in the ground before something happens to them, also my raddish is sprouting so they better be in the ground too, take your time with the flowers hun, wait till they are dry then send them, i have made a seated area in the garden and i have planted lots of lovely flowers in that area too, so i would love them lilacs to set it off a bit, thankyou for that, it's so kind of you...

4. jerzgirl (2745) | 8 months ago | Baking is not my forte either. If not for boxed mixes, I'd probably never have a decent cake ever. But, there is one scratch cake I've made that turns out good every time - if you like a heavy moist cake. It's meant to be heavy. It's a depression era recipe and I grew up on it. I have always liked it and it doesn't need frosting. We always called it "Poor Man's Cake". It was baked in a tube pan (Turk's head, bundt-type, whatever it might be called).
DEPRESSION BOILED RAISIN CAKE
2 c. raisins 2 c. boiling water 2 c. sugar 1 c. butter 2 tsp. soda 1 tsp. cloves 1 tsp. allspice 2 tsp. cinnamon 1 tsp. salt 3 c. flour 1 tsp. baking powder
Put first 10 ingredients in a 4-quart kettle. Boil 4 minutes. Cool 2 hours. Add remaining ingredients. Pour into 9x13 inch greased pan. Bake 40-50 minutes at 350 degrees. Serves 20 people.
No eggs or milk. We'd put colored jimmies (sprinkles, candies) on top before putting in the oven. Here's another version.
POOR MAN'S CAKE OR THE DEPRESSION CAKE
1 c. water 1 c. sugar 1 c. raisins 1 tsp. ground cloves 1 tsp. ground nutmeg 1 tsp. ground cinnamon 1/4 c. shortening (I use liquid) (the old recipe called for lard) 2 c. flour 1 tsp. salt 1 tsp. soda Powdered sugar
Notice no eggs or milk. Bring the first 7 ingredients to a boil. Simmer for 5 minutes; let cool to touch. Add flour, salt and soda. Bake in 350 degree oven - cake for 30 minutes; cupcakes for 25 minutes; cookies about 12-15 minutes. These ingredients will make one 8 inch square or round or loaf cake, 1 1/2 dozen cupcakes or 36 drops cookies (depending on size). Dust with powdered sugar. The small of the ingredients boiling will fill the house. The last comment is a good one because the boiling of the raisins WILL fill the house with the fragrance of the spices being used. Excellent way to build that cake appetite!! I couldn't even wait for the cake to cool before I'd have some!!
Another cake I've made that turned out well is a "surprise" cake. In a deep 9x13 pan, place a layer of miniature marshmallows on the greased bottom. Then pour cake batter over that (your choice of flavor) followed by canned pie filling on top of the batter. Bake at 350 degrees for 30-40 minutes. When done, the pie filling will be on the bottom and the marshmallows will be on the top. It will be almost like a cobbler at times, but it is always yummy!! I like mixing chocolate cake with cherry pie filling or spice cake with apple or peach pie filling. You decide!!

jerzgirl (2745) | 8 months ago | I think you'll like it. I prefer it being cooked in a tube pan because it can't dry out as much as a shallow cake can. What are jimmies/sprinkles called in the UK? They're the tiny cylindrical candies that get sprinkled on top of cup cakes and sundaes.

I used to bake cakes as my mum used to be always bakeing cakes when we were young, and every year she Baked christmas cakes, so with mum bakeing I used to bake as well but over the yeas, I cannot be borthered, well it is only two of us here and I don't want to spoil the hubby and if i do, he'll expect me to bake often, so don't anymore. love and hugs.

6. drannhh (7437) | 8 months ago | I've had some duds, but overall, I'm pleased with my own results. However, I do prefer to "healthy up" the food I make so some might not like them. One of my favorite cakes to make (and to eat!) is applesauce spice cake, but my most favorite I just buy at Sam's Club, as it is their lemon mascarpone cheesecake, yummers. They are big, so I freeze most of it after repackaging it into portion controlled slices:-)

10. GardenGerty (20287) | 8 months ago | I usually make mine from mixes. They are hard to ruin. Hubby made his first one at a lumber camp and it was hard enough to use for target practice throwing axes at it. I do think I used to make a sponge cake from scratch and it was pretty tolerable.
