As chefs, my husband and I are surprised by the number of people who stay at the hotel where we work, who do not let us know that they suffer from this condition, or many others, for that matter. We always cater for any dietary requirement, but it makes it so much harder for us to provide our guests with what they need when they don't let us know in advance.

Can you tell me why it is that people hide their dietary needs? Is it that they don't want to feel different from everyone else; that they don't want to make a fuss, or some other reason?

Morning,

I was diagnosed with Ulcerative Colitis almost a year ago (which is similarr to celiacs disease). I find at least with myself that others jusdge you. For examples if I say I want my chicken fried with this kind of oil not this and these certain veggies the waiter and chef get aggravated. (which is my experience on several occasions in the past). Maybe advertising for your place put in that you cater for all dietary needs. If I go out I usually call ahead of time and pick a restaurent that will cook something I can eat. There could be other reasons such as the members they are going out with dont know about the condition, or dont understand it, the customer may feel like its a burden on the waiters and chef to pepare something for them or their embarrassed about the condition. My personal view is to tell the waiter and chef - I would rather enjoy my meal and avoid any discomfot and pain that a meal coul possible cause me.

I am sorry that you have been diagnosed with this very uncomfortable condition. You seem to have the right attitude though, and call ahead of time to make sure that the restaurant can cater for your needs. As professionals in the catering industry, we just don't understand anyone who is in the business who does not take into account the needs of their clients! Surely, the hospitality business is there to give enjoyment to people - not to make them suffer unnecessarily by making them feel odd, or troublesome etc.! Good luck to you with your health.
