How do I know when to harvest my peas and green beans?

Those are the only things that have come up, besides the pumpkins that I thought were squash! Some of the pea pods are pretty big and firm now but how long do I wait? Is there some sort of sign, like they come off the vine easily? The green beans are just starting but I don't know when to tell if they're ready, either. Thanks for any help you can give!
