ok this is not the right category but i cannot find the one that says food, i have looked on the net for a good healthy recipe on stuffed peppers, i cannot see anything that floats my boat yet, i do love cultural foods and i like to see what people cook in other countries, so if anyone has a good recipe for stuffed peppers then i would appreciate it if you could share it with me, so people do you have a good recipe that i will enjoy concerning stuffed peppers?

Hi Tatt, I like to use ground turkey.. but you can use lean beef also... I make the meat like my favorite meat loaf, and then stuff the peppers and bake them. I use meat, onion, egg to bind it.. whole wheat crackers, sea salt garlic and BBQ sauce... and then I stuff the peppers and bake them when the peppers are done and slightly brown on top... I guess I bake them about 40 minutes on 350 degree heat.

oh YUM, i love the sound of that, can i used minced beef? i love to use this in lies and other dishes, i think it's the same as being grounded, like you said ground turkey, we call it minced turkey...same thing....i want to try that for dinner tomorrow it sounds delicious, thanks oreo, i love that....oh and i will let you know, i have all them ingredients in my fridge...

For two average appetites. Take two peppers (different colours is always good), cut off the stalk ends and clean them out. Cook some rice - about a handful for each pepper. Add chopped mushrooms, sweated onions, petit pois, any other veg that takes your fancy. Add one can of chopped tomatoes. Then add salt and pepper and one and a half teaspoons of hot chili sauce. Mix then stuff it in the peppers. Add a clove of garlic and put them in an oiled dish in the oven at 130 for about 25-30 minutes. You could also make a mushroom sauce and use that instead of the tomatoes and add shredded chicken if you have it to the mix. Make a potato gratin to go with it or reserve some of the tomato/mushroom sauce and pour it over the peppers when you serve them. Uncork one bottle chilled white wine and enjoy.

Try a little bit of mince mixed with little bit of rice added to fried onions ginger and garlic, this is also similair to p1ke's recipe so follow his and when you are going to make it I'll come round to your.lol. Love and hugs.

tamara it would be a pleasure to have you here if i could find somewhere to put you, lol, this is the downfall about my flat, it's just so tiny, it's just big enough for me and my cats, but when i get a bigger place i will be inviting you and p1ke and a few others over for a weekend....that should be fun, i will add some ginger and see how ir goes, i love the sound of the mince inside the peppers...yummy....

I've never cared for cooked bell peppers. When my mom made stuffed peppers, she'd make what she called porcupine balls for me, basically the stuffing without wasting the pepper. Now I can't eat bell peppers because I hate my reaction to them!

I've seen peppers stuffed with tuna salad before. It looks good and apparently many people like it, but I don't eat bell peppers, at least not large amounts of them, like a stuffed pepper. I like them, they just don't like me. I burp peppers for hours after eating too much of them. cry

I prefer stuffing tuna salad in scooped out tomatoes, personally. I've made them for parties and everyone always loves them but that is not what you're asking. I guess I really can't help you much because I don't eat peppers. Sorry!

oh how big are the tomatoes mental, do you use the big beef tomatoes? i could even try them, i am still eating food from my garden staying on the healthy trail, but i am running out fast till next spring, my broccoli is turning purple now, well the leaves are, but i don't see anything that resembles broccoli yet, anyways i will give it my best shot and see what i can conjure up with these peppers, i have 2 red 2 orange 2 yellow and 2 green, do actually like peppers but they have to have something added to them, or they taste too bland

I've used the big beefsteak tomatoes and also plum tomatoes, the ones that are longer than they are round. I cut them in half lengthwise, scoop out the insides and fill with tuna salad.

I've had so many tomatoes this year that I've had to find creative ways to work with them. I've put them in everything but ice cream, it seems. LOL

My mother used to love cutting up green peppers and just popping the pieces into her mouth. There's no way I could do that.

Oh, if you could stick some stakes into the ground around your broccoli plants and cover them with something like a sheet at night when it gets cooler, you can extend the growing season, maybe long enough to get some broccoli.

I've made meatloaf before that I covered with thin slices of the different colored peppers while baking. It looked real pretty on the table and flavored the meatloaf really nicely. Plus, from putting them on top of the meatloaf, I could remove them before I ate any. I got the taste of the pepper but didn't have to suffer the consequences of eating them. thumbup

about the broccoli, they are growing in bedding boxes right now but i do have some planted in the ground, they are not that big but they are turning purple, just leafy shoots right now but i will do what you said because it is getting cooler now and the ground is getting harder, we are looking at alot of rain in the next few days so i just hope it doesn't ie up, jeez it seems like yesterday when i was out there in the sun watering my veg, this year has gone so fast hasn't it? it's not even 6pm and it's getting dark already, i hate then early dark nights, i teld to hybernate during these months....i am going to cook some stuffed peppers very soon, the meat has thawed out now so i just need to get the ingredients together so i will let you know how they turned out, i will let tony be my chief taster to see if they are done right....LOL...

The cold temperatures are what make them turn purple. I've been told that it actually makes the broccoli taste better. I hope you can harvest some broccoli florets before it freezes outside!

I know what you mean about this year zooming by! I can't believe it's October already. Where did summer go??? I had to bring in my houseplants from the deck last night because it was supposed to get down to only 8 degrees above freezing. (It didn't get quite that cold, but close.) I hate the dark, too. I need the sun! I don't get severely depressed in the winter like some people do (if I remember correctly, you get this way, don't you?) but I get terribly stir-crazy when I can't get out in the sunshine. Doing some indoor gardening helps. I started some potatoes inside while it was still winter last year and I did get some potatoes from them! I'm doing the same now. I already have 3 plants growing in my kitchen right now. I'll have to move them soon to the basement so they can be under grow lamps but it really does help to be able to do a bit of gardening in the winter. I'm going to try some other things this year. Sweet potato plants make lovely indoor plants and, if you grow them in large enough pots, you'll get potatoes from them as well as beauty.

I have one pepper plant that never did get planted in the garden. It's on my deck in a pot and, since I bought it late in the season, it is just now producing blossoms. I guess I'll be bringing that inside, too, and see if I can produce peppers. All it takes is a bit of hand-pollinating the blossoms and that isn't hard. I did that with a blueberry plant once. I bought it before it was warm enough to plant outside and it grew blossoms. I pollinated them with a small paintbrush and it produced blueberries right in my dining room. LOL

Are you using P1ke's recipe? It sounds delicious! I just wish I could eat peppers and not become embarrassingly gassy. blush

I love your idea of having a 'taster' and Tony would make an ideal candidate. LOL

well i did the peppers and i used the rest of the meat to make a pie, so i did minced beef, rice, lee and perrin sauce, corn (home grown) some home grown tomatoes, tomato juice and home grown onions, mixed the lot on a huge pot, let it steam till cooked, par boiled the peppers and filled them and put them in the oven for 30 mins then added grated cheese and left them in the oven for a further 10 minutes, then i made the pie from what was left over, it is in my photos, i just made some mashed spuds, home grown of course, added a little butter and cheese and put it in the oven till it was hot, i still have some left and it's lovely and tasty.

i too suffer with seasonal affective disorder and i find it so hard to motivate myself, the summer has gone to fast, it's so cold now, i have had to bring in mall my herbs and let them grow in the lobby, they are growing nicely though, i have some rosemary, dill, flat leaf sage, i am even growing garlic, it's all good but i do miss my garden, cannot wait for spring...

Hi puddytatt, not something I'm terribly keen on so wouldn't actually go to the effort of cooking the things, stuffed food always takes longer to prepare. But they were often served up for lunch down the coast a bit which madee at nice change from souvlaki or chicken. However best to stuff something else at the same time for a bit of variety, such as a courgette.

The ones down the coast had no meat in them, just a simple mix of rice with tomatoes, garlic, onion, seasoning. Simple but tasty and easily done without an actual recipe. happy

Hey tatty, I saw that avatar and added you without even checking the bio--wb! I love stuffed peppers and make mine in the crock pot. I mix the ground meat in with rice (1/2 brown and 1/2 white), put that in the scooped out peppers and pour V-8 over the top. Same thing for cabbage rolls, only those I steam the cabbage in chicken stock first.

oh yum drannhh, that sounds really tasty, i am going to make stuffed peppers today for dinner, i am still on the healthy food and i am on the last of my veg crop in the garden, tell me, can i eat cauliflower leaves? are they safe to eat? i ask this because when i cook cauli, i only use the head and not the leaves...i have some growing but it doesn't have the head yet, caulis are so hard to grow but the leaves are huge, i was thinking of stuffing some leaves too....i used to eat stuffed cabbage leaves alot, so i want to try it with cauli leaves....thanks for the wb, so you recognized me max....lol...awwww that's lovely....

thankyou drannhh, i made them stuffed peppers last night and they were so yummy, i also had some leftovers and made a pie, which i took a picture of, i still have some left in the fridge for later on, it is very tasty indeed. i will have a look at the link too, i could do woth some ideas for cauli leaves, i would hate to see them go to waste.

Hii Puddytatt!

First of all your question in this category really got me surprised but then ofcourse i saw your explanation!:D
There is a community called food on mylot and i'm part of it coz i'm a big foodie!
Now for the recipe.

Ingredients:

Boiled and mashed potatoes.
Fresh cottage cheese (which is healthy)
Onion tomato paste
Ginger Garlic paste
Dried mango powder (not sure if you get it in your country, you can use something sour or lemony instead)
Red chilli powder
Salt to taste.


Heat some olive oil in a pan.Add ginger garlic paste and simmer.
Add onion tomato paste and cook till it turns darker.Now add boiled and mashed potatoes.Add salt and Let it cook for 5minutes.

In a bowl,take shredded fresh cottage cheese.Add salt and red chilli powder.
Mix well.

Now mix the cooked potatoes and cottage cheese.
Fill the peppers with this mixture and bake.

How does it sound?

hi suz, i did mince mixed with brown rice, sweetcorn, onions, lea and perrin sauce, and tomatoe juice, i mixed it all together and heated it in a wok, then i par boiled the peppers and baked them for 40 mins then melted some cheese on them, with the leftovers i made a pie...they were lovely....see my pics, i have put a photo of the pie i made, i just boiled some spuds and mashed them then sprinkled cheese on it and stuck it in the oven...very tasty....
