Hi ladies,

Can you please share your fish recipes with me.
I really don't know how to cook, and what care should be taken?
what are different types of fish, and the same method is followed for all types of fish preparation???

Hi life,
It seems you are in my living room. I have been talking to you all morning.lol
I think the easiest way to prepare fish until you have more knowledge is eaither steamed or baked. I love fried fish but you have to know how to fry.
All white fish I prepare the same way: salt, pepper, a bit of crushed garlic and lemon juice. Leve it a while in a bowl. Meanwhile put in a pot onions (julienne cut), carrots (cut round), sweet pepper (red, green or whatever you have at home). Put the fish over it, ad a couple of tablespoons of good oil and close the lid. Cook it in low for about 20 minutes.
The fish preparation for baking is the same. You can use a foil over your pan so it´s easier to clean later. I put some onion and close the aluminum. After 10 minutes you can add a mushroom cream, some chives and a bit of ground parmesan cheese. Bake covered for another 10 minutes. You can serve both with rice (my favorite, or potatoes.

even my mom says we have to marinate the fish with salt, why to marinate with salt..

Hi lifehugs

Ginger Fish Recipe this recipe my aunty prepares it, since i don't eat fish i have not tasted it. Hope you like it

Ingredents

500 kg Fish
1 tsp Coarse Salt
Thumb-sized Fresh Ginger (finely chopped)
2 Spring Onions or normal onions (finely chopped)
2 tbsp Light Soy Sauce
A handful of Fresh Basil Leaves (shredded)
1 tbsp Peanut or Groundnut Oil
1 tbsp olive Oil

How to make Ginger Fish:

Wash the fish properly and pat it dry with a kitchen paper.
Rub the salt all over it and place it on a heatproof plate.
Scatter the shredded ginger.
Steam the fish for about 5 minutes.
Scatter the spring onions over the fish then drizzle with the soy sauce and sprinkle over the basil.
Heat the peanut or groundnut oil with the olive oil until just smoking then pour it over the fish and serve at once.

Hi life, here is a fairly easy recipe for making Mangalorean fish curry..

Fish - any large fish filets preferably Sear fish or Pomphret
onions chopped
green chillies chopped
tomatoes and ginger - chopped
and a few curry leaves..
grind the following in your mixer
handful of coconut scraping
2-3 shallot onions
Coriander seeds - 1 table spoon
red chillies - 4-5 (as per taste)
half tsp turmeric powder
a small ball of tamarind

In a pan heat the ground masala diluted with enough water to get the consistency you require.Add the chopped ingredients and curry leaves and boil well , add salt and once the raw smell disappears add the fish and shake the pan gently to cover the gravy on the fish. Take it off the stove once the mixture boils.Fish cooks very fast, and if you cook it for too long it disintegrates...you can heat some oil and fry some onions till well browned and add it on top of the curry...
this goes very well with rice happy

onion - 1
green chillies - 2 or 3
tomatoies - 2
ginger a small piece...I think the rest of the ingredients are all easy to follow...

Fish can be cooked many ways, the biggest problem is over cooking, it makes it dry.
I usually bake or fry mine and I watch it very carefully, check it often with a fork until it flakes. I use herbs and maybe a sauce to flavor it. Look on the Internet for ideas.

yes, you are right, as my understanding fish is very good source of protein, and if we over cook they it become stuff and dry (like in eggs), thanks for your views on this thread.
and you mentioned herbs, which herbs goes well with fish and which type of fish.

hi life the thing to remember with fish like white fish is to not overcook them, just till opaque. with white fleshed fish you cook too long they fall all apart, put either a little olive oil or canola oil in pan over medium heat and just cook til opaque then turn over the fidh and cook on the other side for just a minute or two. with salmon you can pan fry with olive oil or canola,just a little, and cook a good three minute s on each side, as the meat is thicker and sturdier. another way is to steam fish for just a few minutes. delicious that way too.making a fish stew you just toss in chunks of the fish and let all cook together til the flavors are all blended. do not over cothumbupok.thumbupthumbup

yes, as per my understanding fish is good source of protein so if very over cook, they it will be stuff and not good..(same like in egg, if we boil for long time we get hard boiled eggs)
and before cooking, whether we need to marinate/apply salt and lemon on the fish, if so why..

I have a very simple tilapia recipe. You buy the frozen tilapia filets. Crush up some ritz crackers (i usually add some garlic to the crackers) melt some butter (you can melt more later if you need) Then you mix the ritz and butter together and cover both side of the tilapia with the cracker butter mixutre. Then bake it according to the tilapia package. It is soooo easy and soo good. Everyone I have made this for absolutely loves it. I found the original recipe on allrecipes.com and it actully called for halibut so you could probably use this method on any white fish. Another easy way to make fish is to batter it and deep fry it. If you don't want to use my recipe, and you have a specific type of fish in mind, go to allrecipes.com or recipecircus.com and search the specific fish. You will find tons of user submitted recipes. I use these websites all the time and have had tons of success with the recipes I have found!

thanks for this feedback, i will definitely visit websites names you mentioned, actually i was looking for indian salmon and really very very confused with the different names of fishes, that to in english the name is different and in hindi its different, so first i was just checking the names, really very very confused.
and you mentioned batter in this batter, what kind of batter you are referring to.

and one more point my mom says first after wash we need to apply salt and lemon on the fish (both the sides) and keep that for half to one hour, then again she tell me wash again, really confused as first she tell me apply good amount of salt and then wash, not understand as why to do this..

It is a pleasure to meet you. If you are also just into a general recipe containing shrimps (almost fish ay? from the ocean atleast) I can recomend you to try out Coconut Rice with shrimps. thanks a lot for this link, honestly we started eating very recently as my mom detected deficiency of calcium (bone problem), and i read that fish is excellent source of protein, calcium and good for bones.
I wish, if you share very simple and basic recipe, i think we eat(i guess) started with fish salmon (indian salmon in india it is called as Rawas)

I will go through my list of know recipes to see if there is any other recipe containing fish which is easy to make.

Im sorry to hear about your mums problem, my grandma had osteporosis before she died, which is lack of calcium in the bones, so they become extremly fragile and break easy. The doctor thinks the main reason that she ended up with osteporosis was because she didnt drink any milk for the last many years of her life, because she didnt like it. Milk and diary products is a very good way to get some of the extra calcium which is needed. 1 glass a day :)

yes friend actually my mom has couple of heath issue, first she started with thyroid, then depression and now osteoporosis, i mean we started few days back, i normally fry them and season them will spices, this way i know, as i want to try new ways, so she don't get bored eating same recipe again and again.
She drink milk, but not always, i always force her to drink..

Actually shrimps contain almost 4 times as much calcium as Salmon if the compared weight is the same, worth a thought. Raisins, Spinnage, Brocoli, Most nuts, egg yolk and oatmeals all contain a considerable high amount of calcium and is well worth adding to the diet also.

I believe that you can also use a general full fat cheese and then add some garlic to it, the herbs in the cheese i used included a larger portion of garlic. Parsley is normally also a nice combination with fish.

i think the basil flavour could work but it would be a little more of a gamble as i do not know how well it works with fish, but i dont think it will ruin the recipe either.

If you use dried parsley you might need a bit more than if you use the fresh parsley, simply because the fresh version got more taste in it.

How much you need to add of herbs im unsure off, but it also depends on how herbal flavoured you would like the recipe to be, I would say 2-4 pieces of garlic cloves and 1-3 amounts of parsley compared to the garlic also depending if it is fresh or dried.

yes parsley we get the dried one and fresh not available very easily.

Personally I prefer canola oil. To make a nice bread coating on your fish of choice, whether it be flounder, cod, haddock or swai. I recommend whisking an egg with a dash of milk or water, dip your fillet into egg wash,then bread crumbs,set on paper towel to let the coating bond. In the meantime,dice up 1/4 Cup onion & 2Tbs. garlic (either powder or freshly grated), when oil is hot add fish and brown on both sides. Add a 1/4Cup of white wine, mushrooms (as much as you like) paprika & a dot of butter on each fillet. Fry until golden brown, if you're not into frying you can always skip frying & just bake. Just don't forget to marinate with wine & mushrooms.

before any others could barge and tease me its time to confess about the Good-old Fish Curry i knewblush.

As you know that i do only learn those items which are my favourite so i learnt Fish Fry---its really easy and can be prepared within minutes---if provided with cleaned Fish Slices.

All i do is prepare masala paste and engrave that on the top and bottom of each slice and then put on some oil---fry it until it gets completely cooked and there we go ----yummy Fish Fry is readydrool

Coming to the normal curry its more of routine but we should take care of the pieces while stiring the gravy as fish is know for its tenderness it splits up easily---I never tried to cook Fish curry though---i'm really comfortable with Fryrolleyes

We like to steam the fish because it is fresh and delicious. Just steam the fish when it is done. Then put some sliced spring onions and ginger on the fish. After that, pour some boiled oil on it and the steamed fish is done.
