What lesser-known anime would you recommend people give a try?  

I think you should see 'FullMetal Alchemist' and/or 'Golden Boy' if you haven't yet. The 1st has a great story, great characters, lots of action, fight scenes, super powers, etc.
The second because it's one of the most hilarious animes I've seen (but I've not seem that much). Then, if you like music I recommend 'BECK'. It has a great story about a young boy that enters in a band (I'm not gonna tell you the whole story lol).

Of course this suggestions depend on what you like in an anime series.

Well I'm kind addicted to manga but not too Anime. Because some Anime is not as good as in manga. Well not all of it ya'know.
So For Manga I suggest you:
- Love Hina -> It's Love comedy story, I loved it, always make me laughed. But there are some nude pic:)
- Detective Conan (Meitantei Conan) -> It's must read manga:)
- Monster -> It's a thrilling story, When you read 1 Volume, you desperately want to see the next volume, It happened to me:).
- 20 Century Boys -> I read it recently. Really Thrilling story, same like above, can't wait for next volume. Btw the creator was same with Monster. his name is "Naoki Urasawa" I loved the way he makes the story:)
- Great Teacher Onizuka -> Real Funny, It's bout a 22 years pervert man that become a teacher for getting 17 years old girl when he already old.
- Death Note - Also Thrilling story, Now It's already come up with 2 movies. I'm Just watch the 1st movies:).
For Anime: maybe I can suggest Samurai X, Detective Conan The Movie (I can't find the boring ones for every Conan's movie, It always Thrilling;)), Great Teacher Onizuka (there is a little bit different compared with it's manga, Hunter X Hunter (Many of my friend said It was a good ones, But I had not watch it yet).
Well I think Just this I can share With you, For Anime I don't watch many Anime so can't give you many suggestion. But be sure to read the manga I already told you about. I loved Thrilling Story:).

Naruto-i like the action and storylin

Bleach-a hs kid becoming a death reaper, ghost, spirits and powers.

Magic Shopping Arcade Abenobashi-traveling through alternet world..funny as hell

FLCL (Foolie Coolie)-i mind complexing anime..you gotta pay attention, but funny, things poppin out of a kids head

Eureka 7-great storyline about the future and mecha

Trinity Blood-if you're into vampire stories..this is a tamed one

Hellsing-another vampire killing vampires story...pretty graphic

One Piece-funny...and a good story line

Zatch Bell-people combining with momotos and battling...had a lot of action and some pretty funny moments

Bobobo-Bo-Bobo -if you lile comedy this is the one...its like anime for ADD people..

Samuri Champloo-saw a few episodes and its pretty interesting

Parania Agent-started watching this and its different a kid going around hitting people with a bat who want to kill themselves

DN Angel-a nice story about 2 families and 2 boys with alter egos

Kikaider The Animation- from a live action show. a robot made with feelings and looks of a human...pretty much the japan basis for the power rangers..

Grove Adventure Rave-haven seen the whole thing, but they say if you like inuyasha you'll like this

Exel Saga-same as the one as above

...those are the ones i've seen so far...most are the more well known but there's some in there that people don't know about...

all of these series r full of action and supernatural powers

Hikaru No Go, Ayashi No Ceres (my personal favourites although it's a super old show), X TV (Clamp's work, very good), XXXHolic (Not bad since it's Clamp's work), Law of Ueki (very similar to Shaman King).

i would recommend watching...

GALAXY ANGELS - this is a cute one, 5 girls that are police in the galaxy and they're hunting for the lost technology (whatever it is, don't bother much) this is so cool!

FULL METAL PANIC - this one is so funny, trust me! you may be get bored on the first few episodes but just have a little patience and wait till it comes on the middle part, it's so hilariously funny, trust me!

So many of my favorites have already been put onto your list by other people. But there are a few left out of the loop that I enjoy watching. Lets see, it's going to be a very short list, so that I don't tell you something someone else already has. ^_^

The Gokusen- There is a real show with real people called the same thing, which I don't like. But the anime for it is great, sadly, only a few epsidoes were made. I guess most other people prefer the show with real people over the anime. I still think it's worth giving a try.

VanDread- Another futuristic based anime, this one has more episodes than The Gokusen, but they really need to get off their arses and come out with the next part of it if they're going to, because I need more.

Deeper Samurai Kyo- More fantasy/olden based with lots of fighting, magic, demonds, and confusion. There's also a really strange love story wrapped up in it, but I typically watch it for the kick arse fighting.
