| My grandmother used to make Rugelach for Hanukkah ½ pound unsalted butter, softened 8 ounces cream cheese, softened 2 cups all-purpose flour RAISIN NUT FILLING: ½ cup sugar ½ cup seedless raisins 1 tsp cinnamon 1 cup finely chopped nuts ¼ cup sugar for topping RASPBERRY JAM FILLING: 1 cup ground almonds 1 cup raspberry jam ¼ cup sugar for topping DIRECTIONS: In a mixing bowl or food processor, cream the butter and cream cheese together. Beat in the flour, little by little. Knead the dough lightly until all the flour is incorporated. Refrigerate at least 1 hour. Divide the dough into 3-4 portions, depending on the size you want the rugelach to be. Prepare one of the fillings by combining the ingredients (except the ¼ cup sugar for the topping) and set aside. Preheat oven to 350 degrees. Roll out one of the portions of the dough in a circle about 1/16 inch thick. With a knife or pastry wheel, cut the pastry into 16 pie-shaped wedges. If the dough is sticky, dust it with a little flour. Sprinkle or spread the filling of your choice on each little wedge. Beginning at the wide edge, roll the dough up toward the point. Place on an ungreased cookie sheet and carefully sprinkle with a tiny bit of the reserved sugar. Repeat with the rest of the dough and filling. Bake for 20-25 minutes. or until golden, brushing with melted butter after 15 minutes if desired. | | | | | |

I made it once for my husband's family, and ever since, they always ask me to bring it. It's pretty easy to make and it's delicious, too! 1 lb medium noodles 1 stick margarine, sweet 6 eggs 1 tsp vanilla 1 lb carton cottage cheese 1 cup sour cream 1 1/2 cups sugar cinnamon sugar as desired 1 cup milk 1 med can sliced peaches in heavy syrup (drain and cut into small pieces) 16 or more marachino cherries cut into pieces Cook noodles 5 minutes, rinse in colander with lukewarm water. Beat eggs in blender until frothy and add to noodles. Mix well. In separate bowl mix together all other ingredients except cinnamon sugar and margarine. Add this mixture to noodles. In baking pan melt margarine, this will grease pan. Add to mixture once margarine is melted. Sprinkle with cinnamon sugar after pouring mixture into pan. Bake for 1 1/2 hours. (Arrange some of the cherries on top before sprinkling with the cinnamon sugar. If the top seems to be getting too brown, just put a piece of aluminum foil on top). | | | | | | |

You can also try any other fruit but the limoncello, mascarpone and strawberries are a great combo. 4 sticks fresh rosemary 6 strawberries, per person 8 tablespoons water 1 cup caster sugar, plus 2 tablespoons 9 ounces (250 grams) mascarpone cheese A couple of glugs limoncello liqueur, chilled 1 lemon, zested Remove nearly all the leaves from the rosemary sticks, leaving a few on the end. Reserve the leaves. Cut the tops off the strawberries, then thread 6 onto each rosemary stick. Place the sticks on a wire rack over a tray. Put the water in a heavy-based pan with 1 cup of the sugar and bring to the boil. Give the pan a jiggle, but don't touch it too much. The mixture will clear, then bubble and then slowly get darker and darker. It's ready when it's a golden brown. Pour caramel over strawberies. Whisk the mascarpone with enough caster sugar to make it sweet (probably about 2 tablespoons, but you may need a little more or less). Drizzle in a little limoncello, then stir in the rosemary leaves and a little lemon zest. To serve, spoon some mascarpone in the center of each plate, lay a kebab on top, and sprinkle with the remaining lemon zest. | | | | | | |

Sweet Potato Latkes INGREDIENTS: 2 sweet potatoes, peeled and shredded 2 eggs, lightly beaten 1 tablespoon brown sugar 2 tablespoons all purpose flour 2 teaspoons ground gloves 2 teaspoons ground cinammon 1/4 cup oil for frying DIRECTIONS: Place sweet potatoes in colander, place a cheesecloth over potatoes, and squeeze the potatoes to release as much liquid as possible. Let the potatoes sit to release more liquid and squeeze again. In a large bowl, combine sweet potatoes, eggs, brown sugar, flour, cloves andcinammon; mix well. Heat oil in large heavy skillet to 375 degrees F. Form mixture into pancake size cakes and fry in hot oil. Flip cakes after 2-3 minutes (when bottom is browned) and brown other side.
