Favorite vegan recipes?

Although I am not a pure vegan, I like some of the vegan preparations.
Here's one I like that you can try!

Bean Sprout Salad

2 cups red pepper, julienned
2 cups carrots, julienned
3/4 cup green onions, sliced diagonally
1 1/4 cups celery, sliced diagonally
1 cup mushrooms, sliced
1 1/2 cups mung bean sprouts, rinsed
1/4 cup olive oil
2 t. toasted sesame oil
2 T. tamari
2 t. lemon juice
1 t. garlic, minced
1 t. ginger, minced
salt and pepper to taste
2 T. toasted sesame seeds


In a bowl, combine all of the vegetables. In another small bowl, whisk together the olive oil, sesame oil, tamari, lemon juice, garlic, and ginger. Pour dressing over vegetables and toss lightly. Season with salt and pepper to taste and sprinkle with toasted sesame seeds.

Serves 6-8

I often look at websites to choose meal idas. I don't always follow the recipes completely but often adapt the slightly depending on whether I have all of the ingredients etc. Some of my favurite sites at the moment are http://www.recipesforvegans.co.uk and http://www.parsleysoup.co.uk. . I hope you find them interesting.

I like potato stew. I don't have a recipe for it, I usually just make it up as I go along, and depending on what's in my pantry.

But generally ingredients are
1 Onions
5-6 potatoes cubed
water
vegetable broth
1 can tomatoes
tomato paste
salt pepper
green beans
red pepper in strips
1 zucchini

and I'll throw in veggies I need to use up.

Wow,I have MANY great vegan dishes. Some are simple and quick, others are more time consuming. Here are a few easy ones. (Have you ever checked out FatFreeVegan.com -- they have HUNDREDS of vegan recipes!) I never really measure, I always just throw in whatever and cook to how I feel is right, how I like it.

Tofu Salad Sandwich (VERY QUICK AND EASY! serves 2-3)
Smash about half a block of firm tofu and squeeze all excess fluid from it. Mix it in a bowl with some cilantro, a tiny amount of garlic, a touch of salt, and a couple tablespoons of Vegenaise (or Nayonaise or whatever vegan mayo you prefer).
Scoop it onto some toast. (My fave is whole wheat.) It's great with any toppings almost. You can add onion, avocado, tomato, lettuce, sprouts, mushroom, whatever!!


Mediterranean Pasta (one pot meal, fairly quick & easy, can serve up to 10)
Cook some orzo (about 8 oz) according to directions, but do not fully cook -- cut off about 2 minutes before recommended cooking time. Drain and set aside.
In a large pot, cook one large chopped onion in some oil. After a couple minutes, add a can of tomato sauce, some tomato (about 10 oz of chopped canned tomato or two medium chopped fresh tomatoes), some spinach (about 6-8 oz), and some artichoke quarters (about 10 oz).
Let simmer over low heat for 6-7 mins, then add in some mushrooms (any kind, I usually just use the standard white button mushrooms -- about 8 oz), and some capers (a few tablespoons, depending on how much you like them) and black olives (about 10 oz).
Finally, after a few more minutes of cooking the veggies, add the orzo and some salt and garlic. Simmer about 5-10 minutes together. You may want to add a bit more tomato sauce if it looks too dry. It should be a little saucy but not dry or soupy.

Humm... that's a hard question to answer... I'd say my favorite vegan recipe is vegan Fetucinni Alfredo make with coconut milk! It may seems strange to make it with coconut milk but trust me it's amazing! I've post the recipe on my blog if you're interested!
