Beef Jerky Survey.. Can you help me out here?  |

| Ok, lately my husband has been living in the kitchen making homemade beef jerky. He takes it to work everyday and sells it and is making almost his wages just from the jerky. We have been thinking it might be worth trying to expand on the idea and sell it around the country. I wanted some input from the mylot Jerky eaters. What 'flavours' do you like best? (teriyaki, hot, etc) Do you like strips of roast, or do you prefer jerky made from ground meat? What would you pay for 6 ounces of beef jerky? We noticed an 80 gram package around here sells for about $6 (canadian dollars) Do you think there is any other meat that makes a good jerky? We can't sell wild game. It's against the ministry regulations..although he dose make it to eat himself. | | | | | |

| | Thank you for your hepful response and your encouragement. I will definately run the mustard idea by him.. he's really good with his spices and homemade marinades. He has a terrible time making enough of the teriyaki one, it goes fast. He made one he called pepper garlic.. It was a lot like a montreal steak spice.. it went well too. If this takes off, we are going to need two kitchens, because I run a dessert bakery as well, lol. | | | |

| | I am not one for liking the teriyaki flavor. But I prefer the smoked or hickory flavor. Sometimes, mesquite is great too! I am not one that likes the ground meat. But I prefer the stripes of meat. I don't know how much I would pay for it as I never really looked at the size of the package my partner likes to buy. But...when you say "wild game"....does that mean turkey is out? What about chicken? I am not a big red meat person. So, this is why I ask. If you can't do that, is it possible to do pork loin? That is a good strip of meat that could possibly be cured and dried! :) If you do start to market it...be sure to market online and take paypal! :) I bet you could have some good supports from myLot. | | Well, he would be allowed to sell domestic turkey jerky, but if he got a turkey when he was out hunting, he wouldn't be able to sell jerky made from it. He can make it to eat himself, sane with his bear and deer meat. But up here it is illegal to sell wild game meat. I told him about your response and he said "Hickory is the king of beef!" LOL! So I guess he really agrees with that idea. He also makes his own smoked trout and smoked salmon. People eat that up too.. Do you like smoked fish? I guess I should have put that into this discussion too! LOL! Yeah, we could take paypal easy enough. I know theres a big jerky company in the states, but you cant get it here, so maybe he can be the canadian version. | | | |

| | I have been ordering beef jerky from a friend and ex-coworker in the Fresno, CA area. I have a link to his site from my website (at www.dragonmojo.com) He offers two choices, but I think they are both teriyaki (he differentiates the two by calling one "teriyaki" and the other one "hot"). I opt for the hot, since it lasts longer. He gets his meat fresh and does it strip style and not ground. His 6 ounce package is $10USD. When I was much younger, my late grandmother would buy some jerky at a bazaar. That was some fine jerky! It was very thinly sliced and had a sweet honey BBQ flavor to it. | | We love jerky! My whole family that is. My husband makes venison (deer) jerky and we eat it all the time. He makes a "smokey" flavor which is quite great! When I buy from the store, I prefer teriyaki or bbq flavors. I also like regular. I believe here in the US we pay on average around $6 for a 6 ounce bag. Maybe more or less depending on where you buy but that's a fair price. Also I prefer strips to ground. Strips are more challenging giving the actual "jerky" experience. | | We really like the super-thin strips of jerky (not ground), and it is hard to find. There is an outlet in California that used to distribute around here, and then they suddenly stopped. I finally found them again after many years and we placed a large order. Their customer service was poor; it took them days to get back to me and what they sent came unsealed, so when I took the first package out of the box the jerky spilled everywhere. I believe we paid about $14 for a pound (shipping was cheap). It was worth the price only because it was so hard to find around here. We bought the sweet and spicy flavor. The second ingredient listed is terriyaki sauce, but they also offer a terriyaki flavor, so I am not sure how to explain that... As far as any other meats, we also tried the Hickory Farms ham jerky. The flavor was good (brown sugar), but it was also thick and I think I would prefer that thin as well. They don't sell it on their website, and I am tempted to buy a dehydrator just to make my own thin ham jerky. Unless you start making/selling it... :) | | | | | | |

| | Well, we invested in a very expesnsive meatslicer a few years ago, so he is slicing these roasts pretty thin, so people who like that thin jerky will be happy. We also have a vacuum sealer and the jerky comes in heavy duty vacuum sealed packaging, so I guess our customers will be happy that way too. Id that $14 american? Sweet and spciy .. I'll mention that to him too. WE have a dehydrator and he uses it when he makes the ground style, but the for strip style we hang each strip from a rack and put it in the oven, for a LONG TIME,lol. I actually prefer the strips of roast but the ground isn't bad at all...I'd say start with both and find out which sells better :) As for price, it's about the same here in Newfoundland 80 g for approx. $6.99. I like the strips better and I when I buy it pay about $6.99 for a 8 oz. bag its very expensive...I make my own to I use venison only can't afford to make it with beef... never though to much about other meats I wonder like lamb ?? its very costly too though...the one thing you have going for you is you can both work from home ... wish you luck ps how about a honey mustard or RANCH ... now I will have to try some ...lol | | | | | | |

Teriyaki does seem to be pretty popular so far, that and Hickory. I'm looking at the US prices in this discussion and thinking, Canadian jerky must be more expensive, lol. He makes venson jerky too, he loves it but he can only give it away up here as it's illegal to sell wild game. We shop wholesale, so the cost of beef is actually not too bad.. He bought a 16 pound roast the other day for about $35, he took off about three pounds of fat before he could use the roast to make jerky..so that's not too bad. | | | |
