Beef Jerky- Is There A Cure For Over Drying?  |

| I've mentioned before that my husband makes his own beef jerky. Well, he just finished drying almost half a cows worth, and he over did it. It is way too dry. Please! Before I have to listen to any more curse words emmanating from the kitchen, does anyone have a tip on fixing it? Is there any way he can moisten it up and dry it again? If anyone can help me with this one, I'll be so very greatful! | | | | | |

| | Hi. We make beef jerky out of deer meat. My husband used to overcook it in the oven. we bought a dehydrator and it saves alot of time and worry. you can put your beef on the trays and check it about every 2 hours. You can have it moist if you like. The only way to over cook it is by not checking it about evry 1-2 hours. | | | | | | |

| | He makes venison jerky too, and bear, he can't sell those though. He uses a dehydrator and the oven. The stuff in the dehydrator was passable, but not the stuff in the oven. He has been looking at buying a really big dehydrator, he probably will now, lol. | | | |

Conveniently, I just bought 4 pairs because we were supposed to be working through some renovations at my work, but then the third day they shut it down till they were done. I thought maybe steam it too. I wonder if it would work.. he could try a few pieces, yeah, that was a good idea. I'm going to run it by him. I googled my question and came up empty handed. The funniest part of it is, I decided to go out alone to pick up my pay, and get a few minutes to myself which never happens. The laundry was already in the trunk, so I stopped at the laundrymat, I did call and let him know. Well, he decided he was going to drop my daughter off at the laundrymat to make my life 'easier' (Not!) while he ran out to grab some more meat. I had started the dryers and was just about to run over to the bank while the clothes dried. Needless to say I was mad. By the time he got home his jerky was dried out. HA! | | I live in Namibia. We call jerky biltong. What we usually do with biltong when it is completely dry and brittle, is to pulverize it with a hammer into a fine powder, and then have that with bread and butter. I know some mix it with double cream, and have on bread. You can also buy cheese spread with fine biltong in it. But the biltong must really be bone dry to do that.
