oatmeal - try this..
Spicy version of oatmeal. Just by adding the traditional Indian ingredients of upma, the bland oatmeal transforms into a spicy, feed me more, kind of mush. Add pickle or podi, you won’t believe how good it tastes. Recipe:Dry roast oats (I usually buy Quaker brand - old fashioned oats) in an iron skillet, until they leave their white color, for few minutes. Finely chop one small onion, three green chillies, one garlic clove and 10 paisa size ginger. Add one tsp of oil or ghee to a hot pan, do the popu or tiragmata, then add the finely chopped vegetables, saut them for few minutes. For one cup of oats - add two cups of water and quarter teaspoon of salt. Close the lid and on high heat, bring the water to dancing stage (boil). Now remove the lid and add oats, stirring continuously. Reduce the heat, let the oats cook, covered for about 5 to 8 minutes or until the oats absorb all the water. If you want, you can also add roasted peanuts or cashews at this stage, to make it more wholesome. Serve them warm. Best combination is Oatmeal upma and spicy dhalia powder (pappula podi).

You are right, oats is good for our health so I take it quite often. First boil a cup of water or milk and some sugar or salt is added (optional), then stir in gradually half cup of oats. Cook about 5 minutes over medium heat and stir it occasionally. Most of the time I like to add some raisins or slices of apple, banana to it.

Oatmeal recepie's requirement min 30 minute need to prepare Change to: servings US Metric 2 cups water 1/4 teaspoon salt 4 tablespoons butter 2 cups rolled oats 1/3 cup light corn syrup 1/4 cup brandy 1 cup raisins 8 tablespoons cream 4 tablespoons light brown sugar 1 cup fresh fruit (blueberries, raspberries, blackberries) In a saucepan, heat corn syrup and brandy over medium heat; bring to a simmer. Add raisins and simmer 3 to 5 minutes. Set aside to cool (I prepare the raisin-brandy sauce ahead of time, like the night before, to let the raisins soak up the brandy). In a saucepan, add water and salt; bring to a boil. Add butter and oats. Lower heat and simmer until oats are tender, about 6 to 10 minutes. Place 2 tablespoons of cream and 1 tablespoon of brown sugar, and 1 tablespoon of drained raisins in 4 bowls. Add steaming cooked oats and top with fresh berries. Each person stirs their bowl to enjoy the hidden surprise waiting underneath.

I substitute 1 cup of oats for 1/2 cup of flour in all baked good recipes. Nobody notices, and I think it makes bread and cakes taste better. I wouldn't try it in angel food cake though
