Ok If someone would happen to have a recipe or help me maybe doctor one I have I would greatly appreciate it!
Last week I went to Walmart. they had this specialty box of Lemon flavored cookies with white chocolate chips.
they go REALLY well with a cup of tea.

I am wanting to make some because those were more crispy and I like soft and chewy and the other reason is there was only 8 cookies in the package LOL
It was a nice snack to travel with but only 8 cookies I thought maybe someone would have a soft lemon cookie
or should i make a sugar cookie recipe and put some lemon in it and add the chocolate chips?
Can someone give some advice before I make these?
Thanks for any help you can give

I don't make them often but here is a recipe you might like..

You will need...3 eggs, l/2 cup milk, 2 tsp. lemon extract, l/2 cup sugar, l/2 cup vegetable oil, 3 cups flour, 8 tsp.baking powder. 8 teaspoons may seem like a lot but the cookies will come out nice and light. Heat oven to 350 degrees. In an electric mixer on medium speed, beat eggs, milk, lemon extract, sugar, and oil until well blended.
On low speed, add flour and baking powder. Mix until just blended. The dough should be soft and sticky. Lightly dust the dough and your fingers with a little additional flour.
Drop dough from a teaspoon onto a lightly greased cookie sheet, spacing cookies 2 inches apart. Bake immediately for 8-10 minutes or until lightly browned.
Remove cookies from cookie sheet onto wire racks. Cool. Frost with Lemon confectioners' sugar. If it is necessary to freeze cookies, use heavy-duty plastic freezer bags and freeze the cookies unfrosted. Makes about 50 cookies.
If you want the white chocolate chips just add them in.

here is the recipe for the frosting if you would like to try it.....

You will need...6 cups confectioners' sugar, 2 tsp. lemon extract, and l/2 cup water. In an electric mixer on medium speed, beat all ingredients until smooth. Using a metal spatula, frost the tops of the cookies. The frosting will drip down the sides and coat the cookies. Dry the frosted cookies on racks. Store in airtight container
Note:You can substitute anise or another extract to create different flavors. This cookie is popular on wedding cookie platters or other occasions. I hope this is what you were looking for.

This recipe sounds similar to what your after....

White Chocolate and Lemon Sugar Tea Cookies

3/4 cup butter
1 1/2 cups white sugar
1 cup white choc chips
1 egg
2 tablespoons corn syrup
2 teaspoon lemon extract
2 drops yellow food colouring
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder

In a medium bowl, cream together butter and 1 cup sugar until light and fluffy. Beat in egg, corn syrup, and lemon extract and colouring. Stir in flour, baking soda, baking powder and choc chips. Cover dough, and chill in the refrigerator at least 1 hour.
Preheat oven to 325 degrees F (165 degrees C). Line a cookie sheet with parchment paper. Roll chilled dough into walnut sized balls. Roll balls in remaining sugar, and place 3 inches apart from each other on the prepared cookie sheet.
Bake 12 minutes in the preheated oven, or until lightly browned.

Thanks the white chocolate chips I have are made from nestle!
I think I am going to just put in the lemon juice and not use the rind
hope that will not mess up the recipe.
Thanks again
Now I have to decide which one to use LOL
all three you ladies did a great job so I may just have to try one at a time then tell you all which one was the best
Hope My family can handle all the lemon cookies LOL
