The device then draws air out of the barrel, stretching the fibers in the meat and pulling the marinade deeper into it, according to the company. Meanwhile, the barrel turns, tenderizing the meat as it marinates. The company claims to achieve the same depth of marination in 20 minutes that would be attained in hours to days of conventional methods.
