I found out I think I like Arabica coffee better than the columbian I had been purchasing. What is the difference between these two coffees? Is it the type of beans that is used or the roast?

We have a couple of venison roasts in the freezer and I was wondering how you cook yours? Do you pop them in the oven or do you fix on top of the stove like a pot roast? How does it cook up--nice and tender or a bit tough?
