When are food burns it is because the grill is to hot. Turn down the burners if using gas. If using charcoal wait for it to cool alittle or raise your racks up higher. I dont like my food charred.

One trick I play is instead of raw meat I steam the meat so that it is boiled mildly before bringing to the barbecue. Then I pierce everything with a fork and allow some margarine (you can use butter also) to seep into the holes. Then I always roll it and watch it till it is goldern brown. Never allow the coal to catch fire. Put some drops of water once in a way to bring down the heat. Make sure whatever you barbecue is a golden dark brown when finished.
