What did you cook for dinner tonight?
I had a new recipe for pork chops. I will share it with you now, as it is quite easy.
Put 1/2 cup olive oil in the bottom of an iron skillet. Turn your burner on med high and heat the oil
Put in the pork chops and add your favorite seasonings, salt and pepper. Seer the bottom and then turn. Add more seasoning, salt and pepper to the other side. Seer that side. Remove from skillet and put into a glass baking dish that has been lightly greased with more olive oil.
When all pork chops are done, place into a 450* oven and bake for 20 minutes.
The seering will seal in the natural juices, and prevent the chops from becoming dry.
I like these done with lemon-pepper and Italian Seasonings Yes, these are very good together. and garlic or sea salt.
The olive oil is very low calorie so if you're on a diet these will fit into it nicely.

I use a variation of that recipe, only I add sliced onions and put the skillet in the oven at 350 degrees. We have a convection oven and it forms a gravy that we can either drain off or use with potatoes
What I made was oven fried drumsticks. I mix drumsticks in breadcrumbs with garlic powder, some oregano, paprika, salt, and pepper, or a non salt substitute and bake them in a heated pan coated with olive oil or soft margarine at 400 degrees for about thirty to thirty-five minutes. I served them with mixed vegetables, salad, and mashed potatoes.
I used to make fried drumsticks the regular way, but found it was too much of a bother and used way too much oil.

I have found that i feel so much better when I stay away from fried foods. This isn't deep fried, so the grease was cut to a bare minimum. I've lost 45 pounds by simply staying away from fried foods, and cutting down on sodium.

I believe that you will. The seering seals in the juices so nicely, and it will just almost fall apart in your mouth. There was almost no chewing necessary. You can use whatever seasonings you want, or change them up to fit your mood.

My hubby and kids absolutely loved these pork chops. They were so tender that they almost melted in your mouth. I'm trying a new one with fish tonight. It's parmesan and garlic encrusted talapia. I love broiled fish, and can't wait to see how this tastes, because the recipe sounds wonderful.

Oh...cake. Joy to my heart!
I don't get sweets often. It is one of the ways that I can cut calories, is to find desserts that are sugar free. I do have a recipe for a cake that is made with splenda. i haven't tried it yet. Going to have to do that soon. have a piece for me, as I love butter pecan frosting.

I am simply trying to eat healthier. The olive oil doesn't make me as apt to have an attack of reflux or heartburn that other oils do. It is lighter than vegetable or even canola. If I can't use it, I use safflower.
