mostly because i don't have any in the fridge, lol :) so ones with egg substitue wouldn't be too useful because i don't have that on hand either! Thanks for pointing that out to me!!

LOL, some people just don't like to bake with eggs, others have allergies. You ran out lol, umm, ok lol. I would say look at some vegan sites for recipes; vegans don't eat anything made from animals or animal byproducts so if you are going to find them anywhere, that would be the best place to start.

its funny, i was just thinking vegan as i came here to read your response...i have a few friends who are vegan...it might be fun to try to make some for them for xmas! Will check peta...
and maybe go grocery shopping tomorrow, haha

I was looking for something along the same lines, and ran across this intereesting article instead:

I'll be watching this discussion, though, to see what suggestions come up for the kind that get baked. So far, I've had some success with adding evaporated milk in place of eggs and part of the butter, but the suggestion someone made of substituting mayonnaise did not work for me.

Carob Chip Cookies
1/2 cup butter
4 tablespoons granulated sugar
4 tablespoons sour cream
1 1/4 cups plain/all purpose flour
3/4 cup carob chips
Preheat the oven to 180°C/350°F/Gas mark 4
Beat together the butter and sugar until light and fluffy. Fold in the flour, sour cream and carob chips.
Drop teaspoons of the mixture on greased baking trays and bake for 15-20 minutes. Cool on a wire rack. Makes about 30
Cinnamon Jumbles
COOKIES:
1/2 cup butter
1 cup sugar
2 tablespoons sour cream
3/4 cup buttermilk
1 teaspoon vanilla essence
2 cups plain/all purpose flour
1/2 teaspoon soda
1/2 teaspoon salt
TOPPING:
1/4 cup sugar
1 teaspoon cinnamon
Preheat the oven to 200°C/400°F/Gas mark 6
Cream together the butter, sugar and sour cream. Stir in the buttermilk and vanilla. Sift together the flour, soda and salt; stir in to the creamed. Chill the dough for ten minutes.
Drop by teaspoonfuls of dough 2" apart on lightly greased sheet. Mix together the cinnamon and sugar and sprinkle on the cookies. Bake in the preheated oven for 8-10 minutes. Cool a little in the oven, then remove to a wire rack to cool completely

INGREDIENTS
* 1 (11 ounce) package butterscotch chips
* 1 cup creamy peanut butter
* 4 cups cornflakes cereal
DIRECTIONS
1. In a medium saucepan over medium heat, melt butterscotch chips and peanut butter together. Remove from stove and stir in cornflakes. Drop by spoonfuls onto cookie sheets. Chill to harden.

"These are easy, no-bake cookies of peanut butter, chocolate chips, butterscotch chips and shoestring potatoes."
INGREDIENTS
* 2 cups peanut butter
* 1 (12 ounce) package semisweet chocolate chips
* 1 (11 ounce) package butterscotch chips
* 1 teaspoon canola oil
* 3 cups shoestring potatoes
DIRECTIONS
1. In a medium saucepan over low heat, combine peanut butter, chocolate chips and butterscotch chips; stir until melted. Stir in oil.
2. Remove from heat and stir in potatoes, mixing well.
3. Drop by rounded spoonfuls onto waxed paper. Refrigerate for 2 hours.
