I think a lot of vegetables are better raw, I wouldn't dream of cooking carrots, if I buy peas in the pod I would never cook them, even grated beetroot is nice in a salad and when you think about it vegetables would have to be so much better for you raw and fresh, the only thing I have heard is better for you in actual fact is tomatoes, I believe they a good for men to do with helping prevent prostate cancer but that can even be in tomato sauce...

Veggies are better for you raw than cooked, I am sure. How you ever tried fresh carrots? I mean those that you pull out of the ground, wash and eat.
I grew some in my garden a few years back and they were much sweeter than the ones you buy, even from a local growers market.
Beets I don't think I have ever tried them raw, I do like to boil them and then cool them in the fridge and put them on toasted bacon sandwiches, which I am sure is not that good for me!
I try and eat tomatoes with my lunch as I also read about how they can be good for you.
I did a little reasearch on this and I found that a veggie diet is a treatment for stage III cancer. One "juices" up various vegetables and they only drinks that juice for the length of that treatment. It seems that certain vegetables are known for fighting cancer and it's those vegetables that one uses. Cooking vegetable takes out almost all of the useful properties in them.
Carrots, beets, broccoli, cabbage and cauliflower seem to be neccessities in this diet.
It does make me think that maybe the lack of raw vegetables in the day to day diet may have allowed cancers to spread quicker compared to in the past when one's diet(which included raw vegetables) may have slowed down the development.
I am sure the meat industry would be up in arms if we were all told to eat a more raw vegetable based diet ;-)
