Most chefs prefered to cook breaded dishes into deep, hot oil, however there's another way of frying it using thin oil or little oil, simply put on a little oil in a smoking frying pan cook the breaded dish into it, changing its position clockwise or reverse in an at least 4 times, turn the other side do thesame procedure as the other side and done. By changing its position, your dish will have an even equal doneness. this style of frying actually is my way to lessen my expenses in cooking. It could be yours too, try it youll surely love it.

Yes, the technique is called "pan frying" as to opposed what most chefs do, "deep frying". I myself fry both ways, depending on what I am frying. I perfer when frying chicken or french fries, to deep fry. It's just my own personal preference.

correct! pan frying is the style name, but try frying the chicken in thesame style as I said. after you cooked it in a covered pan full of aromatic vegetables, and some salt and pepper and a little amount of water, finish it in a frying pan, smoking and very hot, you will have a crispy outside and juicy inside doneness of the meat, ideal on cooking whole chicken.

I use to use alot of oil when frying. I saw this done so I tried just a small amount of oil, and there is no difference in taste, and yes it is money saving.
