We all presume that red meat are not a healthy choice, infact i even avoid eating those but as i stumble upon this article posted on yahoo food by RealAge stating red meat to aid in a healthy diet.
Lamb chops or pork chops, bison burgers or veal breast, round roast or Porterhouse steak? Sure, you know meat’s high in cholesterol and saturated fat and that it's less healthy than fish and poultry, but what if you really, really need to tear into some red meat now and then?

Choose leg cuts, such as ham, or loin, as in boneless sirloin pork chops or top loin chops (both have about 7g fat and 170 cals).
Lamb lovers
Try cuts from the shank half of the leg (if labels aren’t clear, ask the butcher). Well-trimmed shank-half cuts have 5-6 grams fat and about 155 calories per serving.

I've never tried bison, but we do actually get it up here in Iowa. I am originally from Louisiana, so we never had things like that in grocery stores. Everything was seafood, fish, and regular meats like beef and chicken. I would like to try it, but the only thing that would stop me is price. We live on a meager food budget, so we mainly just eat beef and pork because it's the most affordable. I would like to correct you about the aka buffalo. Bison and buffalo are not the same thing. They are from the same family, but they are not the same animal. Buffalo are native to Africa and Asia, while Bison come from North America and Europe.
