WooHoo I am a pickler!!

Ok so the last few days I have been canning. I canned 5 quarts of green beans and today I did 6 pints of green tomato pickles. The house smells lovely (spicy and vinegary). I am quite proud of myself. I have always helped prepare and can things but have never been in charge doing it by myself with my daughter helping (she is 17 and is turning into quite the helper) so I am proud of getting everything coming out right. We won't be able to taste these for a week but they smelled divine. Tomorrow we make rag pickles and Thursday it is pickled beets and Friday it is Bread and Butter pickles. What kind of pickled stuff do you like?

Oh no, I'm going to do it again! ..... What's a rag pickle? Congratulations on your first pickling exploits. Isn't it lovey looking at the products of your labours and knowing you have tasty things to eat for months to come? I made some pickled beetroot last autumn, but it's evil stuff that just about turns your face inside out! It's OK if you use very small quantities in cooking but otherwise it's inedible. Ooops!

Well we got 12 pints of rag pickles done (a combo of cucumbers,green tomatoes,cabbage and onions all sliced or diced fine). I will list the recipe keep in mind it makes atleast 12 pints. 2 quarts of cucumbers 2 quarts of cabbage 10 large onions 2 quarts of green tomatoes 2 teaspoons of turmeric 2 teaspoons of celery seed 2 teaspoons dry mustard 2 teaspoons of salt 2 cups of sugar 1 quart of vinegar Dice veggies fine. Combine add remaining ingredients and boil 30 minutes and stir occasionally. Pack in hot steralized jars seal at once.

Forgot to add you have to wait a week to eat them lol. So next week I will let you know how they taste.

I've only done a few things myself. A couple of years ago I made bread and butter pickles several times and I don't even like pickles! My (ex)husband sure loved them and would eat a whole jar at one sitting. He loved watermelon pickles too, so I did that once. Other than that, I just blanched and froze green beans and yellow squash, and the tomatoes we used up as they came in.

I am not a huge pickle fan but I love bread and butter pickles and sweet gherkins. I hate anything dill. So you won't catch me making any dill pickles lol.

Hey good for you! I have always wished that I knew how to pickle and can veggies and such. I would save a ton of money, especially during hard financial times. Often we are in dire money need around Christmas time and this would certainly be a money saving skill. Honestly, I'm one of the most frugal people that I know and it's so nice to meet someone else who values old fashioned frugalality. Be well.

I love pickled beets. When my grandma was still alive she would can and pickles tons of stuff. She would make jelly and preserves too. I have made pickled beets before, but I have never canned them for later.

I preserve everything I can get my hands on. At the end of the season it all looks so good sitting in my cupboards and I feel like its a job well done. I use some to put together baskets for Christmas as gifts. I even add in some of my own herb blends. Many years ago a friend's father came up to stay with us for a week while he was looking for work. As a thank you she sent all kinds of things from her garden including a bushel basket of green tomatoes. Along with this she sent me a recipe for Green Tomato Jam. Now I know that sounds really weird but it's fantastic and it became an all time favorite with my kids. In fact for the first two years they didn't even realize it was tomatoes. If anyone is interested let me know, I can send it along.
