In a Pickle

Well, this little guy COULD be a pickle, if I so choose.
I've got this one bush cucumber plant in a container (the small child's plastic refrigerator, for those of you that followed some earlier discussions) and it has been growing like crazy and has loads of flowers.
There are quite a few females as I can see the tiny cucumber embryos (not sure what they're called), but this is the only one that has grown into anything yet.
It looks huge in this picture, but it's actually about 3-4 inches long. I go out and check it several times a day and can see that it is larger each time I look.
Are you growing cucumbers this year? Will you be eating them in salads, pickling them or what? What type of pickles?

I like them in a salad, or in a mix of vinegar and cold water with salt.
My favorite, though, is a cucumber salad I make with sour cream, mayonnaise and Miracle Whip. Mmmm mmm ...

I don't really measure any of it.
I just use a large scoop of source cream, maybe a couple teaspoons each of mayo and miracle whip, chop up some onion (green onion is great!) a little vinegar, a half teaspoon or so of sugar, then salt and pepper.
Peel (if you want) and slice cucumber and toss in the dressing and chill. Quick and oh, so good! When we eat all the cucumber, there is usually quite a bit of sauce left so I put it back in the fridge. If I have another cucumber to use in the next day or two, I just add a little of the rest of the ingredients to the sauce already there and it's good for another round.

I have cucumbers growing too - my first time, so not sure when they should be developing into fruit. At the mo there are quite a few flowers developing and so I am hopeful of a good crop. We will probably be eating them in salads. The 2 boys love them with their dinner.
Your salad sounds great - any chance you could take the time to PM me with the details?

We love cukes, and we have been enjoying them for about 10 days now. They are doing really well this year.
I will need to get some jars to make my refrigerator pickles, very easy to make and no canning involved. LOL
We also eat them with garlic salt.
A friend gave me a suggestion, haven't tried it yet. But she suggested scooping out the seeds and then putting cream cheese in the scooped out part. I had cream cheese with chives and onion, that I was going to use but the girls ate it all today. LOL

That does sound good, but then most everything is good with cream cheese, right?
I'm glad you're enjoying your bounty. I've still got this one silly cucumber waiting to grow up.
