Your eggs should not be too fresh. 5 days old is recommended. If you are hard boiling eggs, let them boil for at least 15 minutes and then run cold water into the pan until the water is quite cold. Take them out and tap them gently on the counter all over to break the shell. You should be able to peel them without any of the white breaking.

My mom taught me this and it works every time.
1-put a little salt in your water that you are boiling your egg in. I don't know the science behind this, but it's what I do....Mom said to
2-After it's done boiling, then take the pot with the egg(s) in it, over to the sink, and dump it into a strainer.
3-Take a pot holder and pick the egg up and tap it gently on the sides a few times breaking the egg shell, but don't smash the egg.
4- now roll the egg a couple of times with slight pressure, this will help to release the egg shell from the egg inside.
5- now turn your cold tap water one high and peel the egg under it. The tap water will aid you in pulling the eggshell off.
There you go, I make deviled eggs all the time and this method has never failed me

I just drain the hot water then put the eggs on a bowl of cold water. After it has cooled a bit then that's the time that I would start peeling it. It works most of the time but I can't honestly remember why I do such or if ever somebody told me to do it before. It does assure me though that I wouldn't feel the heat once I handle it.

I know this happens coz of the vacuum formed inside the egg. what you should do is Put 2 Tsp. of Salt for 1 egg in the water before putting the egg into the boiling water. It would make it easy to peel :) try it. If this doesnt work try adding some more salt in the water next time! i know it would work. It al
