Do you like bread made with rye flour? I do.

This is the bread that you can make in your crock pot or slow cooker. It is traditional Boston Brown Bread. My husband lived several years in Rhode Island. He said this was a special treat, but his mom did not make it, she got it at the store, and it actually came in cans. Since I relocated the recipe, I have to go get some rye flour and make it for him. I have everything else on hand. This is a dense, chewy, slightly sweet bread.
1 cup Corn meal
1 cup Flour, rye
1 1/2 teaspoon Baking soda
1 teaspoon Salt
1 cup Flour, whole wheat
3/4 cup Molasses
2 cups Milk, sour
OR
2 cups Buttermilk
1 cup Raisins
Directions:
Combine corn meal, rye flour, soda and salt. Add wheat flour. In a separate bowl, stir molasses into sour milk or buttermilk and add to dry ingredients, a little at a time. Stir just enough to blend and add raisins.
Spoon into two one pound coffee (or three vegetable) cans that have been sprayed with cooking spray or greased,(cans should be 2/3 full) and cover with foil. Tie the foil on. Place cans in bottom of slow cooker and pour 2 cups of hot water around cans. Cover pot and cook on high for 2 1/2 to 3 hours.Bread will be dry on top when done. Remove cans from pot and let stand 5 to 10 minutes. Turn bread out on cooling rack.
Serve with Boston Baked Beans, of course.
I have seen other recipes that omit the rye flour, but I like it this way. Will you try it? Do you have any crockpot recipes for bread? Do you think this would work with banana bread?

Where do you get, or how do you make a solar oven?

I am hearing a lot about solar ovens lately. I think it would be cool to have one.

I Love rye bread and thank you for the recipe:):):) I just have a problem with molasses because no matter how little I use I always end up having trouble with my stomach when molasses are used. I am not sure why. Do you think it can be substituted with something else?
Or even just not used?
I have no recipes at all for bread and I have just a handful of crockpot recipes - none for bread :) - .
As for banana bread... a huge favorite in our home :)

It probably bothers you because it is high in iron. If I was going to switch off I would use the same amount of honey. I am sure the syrupy consistency adds moisture to the bread. It may come out a lot sweeter though.

That sounds like a great recipe. I've heard of making bread in cans but have never tried it. I love rye...that's what we've been buying lately at the store because it's the healthiest one we can find (no sugar or enriched flours)

This recipe seems to need the coffee cans for volume, I ended up using four small cans. They slice up nicely.

Cooking with kids makes them like more foods, and it teaches lots of school skills without them knowing it. I think that is great.

Oh! I'm so excited you posted your Boston Brown bread recipe! I can't wait to try it out, I just put rye flour on my grocery list lol. Funny, I cannot eat wheat without getting sick, but rye doesn't seem to bother me. Storebought rye bread is nothing like homemade and fresh! Thank you so much for sharing the recipe with us. It'll be interesting to see if somebody comes up with a crockpot banana bread recipe, that sounds like it'd be a winner too :-)

I never gave sourdough a thought, and I used to keep starter on hand all the time when I was a young mother. I wondered about the yeast too in breads maybe being the offender lol. Just had a thought, maybe avoiding yeast might ease my RA symptoms too, I've read where there might be a food/allergy connection. Hmmmmmm, now you got me thinkin'... I will get out my sourdough recipe though and I'll have to make some. Thanks for the thoughts! :-)

Have you tried sourdough bread. Some people do better with that than with wheat.

I would not know where to buy Rye flour to try this and see if I do like it. I know that I do enjoy a lot of homemade breads though. Have had Rye bread from a store before which was not too bad. I really wonder if Banana bread could work this way as well. Problem is Banana bread is something you need to share or make sure you have space to store it, as it is not the Best treat to have for people like me.

I buy rye flour at the grocery store, or Super WalMart. You probably can get it online as well. When I make quick breads like banana bread, I freeze it. Actually, I have some herbed cottage cheese bread in the freezer as well.

I don't think I ever met a bread that I didn't like. I have never had a sweet rye bread though I bet that is really good especially with the raisins. That sounds like a really neat way to use the slow cooker, I will have to give this a try. My aunt used to make individual loaves for everyone on Thanksgiving, she used to cook each one in a little tera cotta flower pot. They were so good too. I really have to learn how she did that. I should probably write her a letter, I have not seen her in a few years and she is getting up there in age. She lives in Ohio and we live in Illinois. I am sure she would tell me how she did it if I wrote to her.

Yes I do, rye bread is one of my favorite breads. It has so much more flavor and density then white bread. Thank you for the recipe it sounds really good, I will print it out and give it to my wife to make. She is a pretty good baker so she should be able to make this very good. Thanks again!!

I make this for hubby, his mom used to buy it when he was growing up. He said it came in round cans then, too.

I love rye bread. This sounds kind of like a recipe I have for rye bread to make in my breadmaker. I've never made bread in a crock pot. And my bread is yeast bread. But this sounds great.
Now, I have made a chocolate cake that is very chewy in a crock pot. It was also made in a coffee can. When we were building our house, I'd put on a crock pot cake on the weekends in the morning and we'd enjoy it that night after we got through working on our house.

You will have lots of requests for that recipe, including for me. If you can make a discussion of it, you can probably post it. I like to be able to share a recipe from time to time, but I do not like to have to send a dozen or more private messages. That is why I try to find something to discuss and then add the recipe to it.

I can remember my Mom buying Boston Brown Bread in can when I was young. We use to like it with cream cheese. Sometime with a little canned crusehed pineapple!
It was very good!
