Well Monday I made 5 more quarts of homemade pickles from pickling cucumbers I am growing this year. I think next year I won't plant so many of them as I have more than enough and have given so many quarts away. They are delicious as my neighbors and friends have stated to me. So I wait till they return my jars then replace it with a full one for them. I have done maybe 20 quarts so far this year I think. Do you make your own pickles? Do you pickle anything else that you grow? I pickled some zuchinni with the same recipe for dill pickles and the wife didn't like them too much. So any other pickling recipe would be good to se here as well.

I really wanted to do some pickles this year - my favorite are bread & butter pickles but afraid my cucumbers did horrid this year and have only gotten a few cucs for the table and that's it. If we would just get a good rain - I've tried watering but there is just so much and it's hard to get to the back where the cucs are.

If you are going to make pickles you really should buy pickling cucumber plants. They are made for that. Regular cukes have too much water in them and don't turn out as good as the pickiling cucumbers. try them next year. Pick them early and make whole dills or let them grow and slice them up for bread and butter or wedges.

thanks, I'll do that, I always wondered just what the difference was between the two. Also next year as soon as I plant that back fence I'm going to put soaker hoses in so I can water better back there - will rotate crops so gourds will be back there next year.

They must have pickle recipies on the iternet somewhere or you could check like an old timey cookbook. They must have pickle recipies. In fact I'm pretty sure they have pickled zuccchini. Another thing you could make would be french fried zuchini.
or even fried pickles. I like to eat those sometimes when I go out to dinner.

I have not made any pickles or relishes in a very long time. I have a recipe for you from my mom, though. I never saw her use it, but she gave me this one for Snappy Dilled Beans. 4lbs whole green beans, mustard seed, dill seed, dried minced garlic, crushed red pepper.1/2 C pickling salt, 5 C Vinegar, 5 C water. Wash, drain and cut beans to fit pint jars; pack into hot sterilized jars with 1/2 tsp. each mustard seed and dill seed, and 1/8 tsp. each minced garlic and crushed red pepper. Combine vinegar, water, and salt. Heat to boiling. Pour over beans with 1/2 inch head space. Process in waterbath 5 minutes. If I remember correctly, I also pickled okra with this same recipe, and it was good.

I wish I knew how. My daughter loves pickles. When she was going through chemotherapy she would be so sick that I couldnt let her eat them. Now that she's in remission she orders pickles on everything. I would like to grow tomatoes someday. Unfortunately I dont have any grass where I live. I have heard you can grow them in a bucket. That's not how my dad use to do it. I live in a city and I live right in the center where its busy from traffic and business. I dont have the proper surroundings to plant anything. SOmeday I will you can bet on that. dl

You can grow what's known as patio tomatoes.
They grow in a pot on your steps or patio etc.

We have always liked the fourteen day sweet pickles - they take a little more time and work but are well worth it:
Wash seven pounds of cucumbers and place in crock. Make enough salt brine to cover (I use a ratio of 1 cup of pickling salt to two cups of water - the recipe says strong enough "to float an egg"). Allow pickles to stand in brine five days. Drain. Cover with cold water and let stand two days. Drain. Cut into slices and cover with boiling water with two tablespoons alum. Let stand 24 hours. Drain. Cover with syrup of 6 pounds sugar and 3 pints vinegar - bring to boil and cover pickles. Add pickling spice as desired. Heat pickles and syrup just to boiling for three more days. On third day, heat and seal in jars.

The recipe is one that was used by my ex-MIL. We have always put some green food coloring in the syrup to make them greener, but it's not absolutely necessary.

Cukes do well in heat and humdity.
Planting them depends on the warmth etc in your area as to when.
Ask at a local nursery about this.

Darn, you should save those and use them for Christmas gifts!
By the way, I'd never tasted a banana pepper before nor heard of it. I had a sample at the grocery store yesterday of a sub sandwich and asked what those things were on the bottom that were so tasty--they were banana peppers! So I went to the aisle they told me and bought a jar. I added them to my egg-beater omelet this morning and mom and I thought they were yummy!!

Hi Grandpa Bob.
Well, you are now all pickled I wish I could have tasted some of them pickles. Did you make any of those bell peppers? I wonder what they would taste like pickled. My friend's friend does pickled onions and chutneys and I have tow big jar o pickled onions an one jar of the chutney but I'm not too keen on the chutney. I have never done any pickling before and don't think I will as my garden is too small to grow anything except tomatos and our weather is not so good, don't get much sunshine in the U.K. Carry on pickling GRANDPA BOB.
Tamara
