I have half a dozen of ripe apples. Other than making apple sauce, can you suggest me some simple vegetarian recipe with apples

Hi there this is one of my favorite recipes when it comes to apples that I just don't know what to do with... I hope you enjoy it...
Apple Walnut Salad
Ingredients for Apple Walnut Salad
3 ripe apples
50 grms chopped walnuts
2 lettuces
Black Pepper to taste
Dressing for Apple Salad
2 1/8 cup vinegar
1/2 curd
50 grams mustard powder
1 tsp chopped dill
1 tsp crushed walnuts
salt and pepper to taste
sugar to taste
Method for Apple Dill Salad
1)Mix all the ingredients of dressing and refrigerate
2) When ready toss salad with mustard dressing and top with chopped walnuts

What about Apple Fritters? Not the big donuts you buy at the bakery, but a sweet item, nonetheless. You will have to look up the specifics, maybe the Betty Crocker or Bisquick sites could help. Anyway, I will tell you the basics. Core the apples then slice into wedges. Dip in a pancake-like batter and deep-fry(or pan-fry) until a crispy golden-brown. Shake on brown sugar and serve. Yummy.

You could make home made apple pie!
or fried apples and peanut butter.
you could make your own apple juice if you have a juicer
make a fruit bowl
you could make apple crisp! (its a pie) but its good.
you could make an apple cake? or a fruit cake thingy, umm, apple muffins.

Apple Dumplings
4 Apples; pared, cored
3 tb Granulated sugar
1 ds Cinnamon, optional
2 tb Granulated sugar
1/2 c All-purpose flour
1/4 ts Baking powder
1 Egg; beaten
4 tb Butter or margarine; melted
2 tb Chopped walnuts
1 tb Grated orange rind
Preparation time: 20 min. Baking time: 25 to 35 min. Oven temperature: 375 degrees F. This is an easy-to-prepare variation of an old family favorite. Use baking apples for best flavor. Preparation:
1. Prepare apples. Make some slits in each apple.
2. Place apples in lightly greased custard cups. Dust with sugar and cinnamon.
3. Stir together sugar, flour and baking powder. Mix in egg and melted butter.
4. Spoon batter over apples, dividing evenly. Sprinkle with walnuts and orange rind.
5. Bake at 375 degrees F. until apples are soft and batter is golden brown, 25 to 35 minutes.
6. Serve apples slightly warm with orange ice cream or a dollop of whipping cream, if desired.

Why not try frying them. When I was child my mother used to fry apples for our Sunday breakfast. It is very simple, just peel them put them in a skillet with butter and cinnamon and fry them until they are tender. It is sort of like a apple pie flavor without the crust. Very good.
