We take chicken quite often too, as it's the easiest meat to cook.
I usually use chicken drumsticks or thigh meat. Spread ginger paste, then black pepper sauce on the chicken - allow to stand for about an hour. Bake in uncovered foil for 20-25 minutes at 200 degrees. We like this dish very much - crispy skin, and tender flesh!

I am always on the hunt for new chicken dishes and I get sick of the same old mushroom soup casserole type stuff too. I like allrecipes.com to find new recipes. If you like mexican, try putting it in a crockpot, add a can of corn and a cup of salsa and a can of black beans and cook it 5-6 hours on low and 10 minutes before serving, put in a package of cream cheese and mix. Great on tortillas.
