We take chicken quite often too, as it's the easiest meat to cook. I usually use chicken drumsticks or thigh meat. Spread ginger paste, then black pepper sauce on the chicken - allow to stand for about an hour. Bake in uncovered foil for 20-25 minutes at 200 degrees. We like this dish very much - crispy skin, and tender flesh!

I am always on the hunt for new chicken dishes and I get sick of the same old mushroom soup casserole type stuff too. I like allrecipes.com to find new recipes. If you like mexican, try putting it in a crockpot, add a can of corn and a cup of salsa and a can of black beans and cook it 5-6 hours on low and 10 minutes before serving, put in a package of cream cheese and mix. Great on tortillas.

Why not try this. In a small bowl, mix hoisin sauce, lots of garlic, bell peppers and onions then line chicken pieces in foil. Pour mixed sauce on top. Bake for 15 minutes. Very healthy and easy to prepare.
