Adobo for Dinner

That's what i am cooking tonight. It is a native dish, made of chicken, soy sauce, venigar, laurel leaves...It's a Filipino dish. But it is something i still try up to now, to master. I have known from some friends abroad that there are so many people - of different nationalities who have tried this dish and loved it. But to me, the best tasting was my uncle's adobo. I wish tonight, i could master this dish.

Hmmmmmm...smells great! hehehe... I love adobo. I just had my dinner an hour ago and you made me feel hungry again. This is bad! It only means that I'm gonna grab something to munch. Now it's your fault. lol. Anyway, good luck in perfecting your adobo. I hope you'll finally master this dish. Let me have a bite when you do, OK? hehehe

i have heard the words adobo before.
some how i was thinking this was chicken cooked in a traditional
earthenware pot with a lid.
is this correct?
i would love to have this recipe.
i'm sure in time, you will master your uncle's technique.
but, believe me, even if you have the recipe written down, there are
few times that i've been able to cook as well as my grandmother.
still, it is a goal to make a pie as great as hers.

Adobo could be sauted chicken and left to cook in its sauce in any pot. Some fry the chicken before sauteing, some just put everything (soy sauce, venigar, garlic , onion) together and let in cook in the pot. The main ingredient of any adobo (chicken, pork, beef, fish) as i know is laurel leaves. Some add potatos, and even pineapple slices in their adobo.
Once i master this dish, i plan to improvise and come up with my own special recipe. DO you know that there is even American Adobo? But it's a title of a Filipino movie, set in USA.:)
What's your grandmother's pie? My mother makes the best Buko Cream Pie in the world.

i love foreign films.
especially ones that include cooking.
but maybe the american adobo doesn't contain food !
i'm thinking your "laurel" leaves might be like our bay leaves.
my pacific rim chicken is marinate chicken in 3 tablespoons of
lime juice (the bottled works fine) and 3 tablespoons of soy sauce,
ginger and garlic to taste.
now your vinegar would take the place of the lime juice for the acid
to tenderize the chicken.
oh, my mother had the most wonderful pie crust. used the old crisco
shortening recipe. the top of her apple pie was sprinkled with cinnamon and brown
sugar.

I found this recipe for Chicken Adobo and it calls for bay leaves. Which I guess is the same as Laurel leaves. It sounds good. I might have to try it sometime soon.
CHICKEN ADOBO (FILIPINO VERSION)
1 whole chicken (cut into eighths)
1 whole garlic (chopped)
olive oil or vegetable/corn oil
1 tsp ground black pepper
4 whole black pepper cloves
3 dried bay leaves
1 cup soy sauce
1 cup vinegar
**7up/sprite
**1 whole lemon (cut into 4)
Remember to wash your chicken very well. We recommend using the lemon (in ingredients) to scrub all over the chicken parts and rub some salt into it as well.
Heat oil and add all of the garlic, and cook until garlic is lightly browned. Add chicken and saute until the chicken is beginning to tenderize.
Add ground black pepper, whole black pepper cloves, soy sauce, and vinegar, and let simmer for 25-35 mins or until chicken is done.
Make sure to add more vinegar or soy sauce until it suits your taste (should be a bit tangy). When chicken is tender, add some 7 up if you want a sweeter taste, and let simmer for 5 more mins.
Serve over rice.

Wow!!!!I'm a filipina and mos of the time i cook adobo..I love to cook and i have lots of dishes know to cook other than adobo...When i cook adobo, i first simmer it with garlic and laurel leaves until tender. Then i will fry the chicken and put again the sauce and i'll simmer it again until the sauce comes thinner....yumyum!!!!
