help with cooking sinigang:)

hello fellow Filipinos! I am about to attempt cooking Sinigang na Hipon:) I have the instant tamarind mix, the shrimp and some of the veggies: onions, tomatoes, eggplant and okra. I am missing Kang Kong and Gabi, i can't find them in the groceries here in Singapore. Do you think i can use other green veggies? What else am i missing? Any help would be appreciated because this will be my first sinigang attempt ever:)

You missed the Dahon ng Sili. It's so important because it gives the sting on you Sinigang. Your Sinigang will be fine even if there's no Kang Kong. When you are about to pour your Tamarind mix, make it sure that the water is not clear. It's either orangey or something near to it. Clear water means less taste.

oh no! how do i make the broth orangey? i did read somewhere that i am supposed to use rice water instead of just plain water.

You can use rice water but the Tamarind mix itself will make your soup orangey. Meaning, you need to pour enough of that mix. Some people like my mom used to pour bitin so i need to remind her that pour more of that mix to make it more tangy.

you can add also the "sili" itself, the whole sili to make it better in taste with slight ho flavor, you can add or replace kangkong with camote tops is it there in sg? but if you can't find it too it's okay without the leafy vegetables what matters is the flavor or taste of a real sinigang.
