Need help with dinner tonight

I am not going shopping for groceries till Saturday, so I am trying to make due with what we have in the house. I have half a package of mini meatballs. I threw those in the oven to bake up, but I am not sure what to do with them once they are cooked. Got any ideas? Here is what I have to work with: green beans mashed potatoes russet potatoes onions celery carrots cream of mushroom soup canned tomatoes rice spaghetti noodles mac and cheese I of course have milk, eggs, and bread too.

What a decison to make. I think that I would use the potatoes. Either have mashed potatoes with cheese in iot and serve the meatballs in a gravy using some of the tomatoes with string beans on the side. Or else, first half boil the potatoes and cut them in slices and put one side. Add meatballs, carrots and gravy to a oven dish and cover with the sliced potatoes and bake in oven. Brush the sliced potaoes with oil or butter to make themn crispy. About 10 mins before the end put cheese on top to melt. Again serve with green beans. Blessings

I should have said that if you want a cheesy crispy topping then sprinkle cheese and some kind of corn flakes or bacon bits on top of the potatoes about 10 mins before the end. Kids love it this way.

Hi lilybug..theres lots you can do with that but I dont know what you like... You could have spaghetti and meatballs..just add the canned tomatoes and some onions and celery.. you could make mashed potatoes and put the meatballs on top and smother with the mushroom soup... Meatballs and rice is yummy too..again use the soup as gravy..or leave the rice white and mix in tomatoes, celery and green beans.. Another yummy dish is taking the mac and cheese, cook it up, put in the meatballs, celery and tomatoes and onions

I asked my son too and he voted for BBQ meatballs, mashed potatoes, and green beans. I like some of your ideas though. I will have to keep those in mind for next time.

What I would do is put the cream of mushroom soup over the meatballs, and serve it over rice. Then you could have your green beans or tomatoes as a side dish, along with raw carrots and/or celery.

This is an easy one for me. If you have canned tomotoes chop them up really fined with some onions to make a real quick tomoato paste and then boil that will some pepper and salt and it should taste pretty good after boiling for a little bit if you want you can add some water in there and then throw in the meatballs. if you have bread you can have bread and butter if you have butter also if you have garlic salt or powder you can make up some quick garlic bread. Also you can boil your spaghetti noodles too if you want spaghetti and meatballs. Enjoy your dinner.

I asked my son and he said no to spaghetti and meatballs. We had pasta the other night, so he is not ready for more yet.

do you need to use all of them if not, maybe you can add those green beans, celery and carrots to the cream of mushroom soup, then you'll have mushroom soup with veggies and add those meatballs to your canned tomatoes and make spaghetti with meatballs, then add some more milk and a little cheese with your mashed potatoes. i hope i can be of help.... Use them with the spaggetti noodles. Or you can do what we did at the daycare for lunch the other day. We had green beans & took meatballs and put them on bread and made meetball sandwiches. Enjoy your meatballs

lilybug, You may want to do your menu as follows: 1. Fried rice with green beans, onions, diced potatoes, carrots, celery, tomato ketchup and eggs. Serve with a sunny side up. 2. BBQ Meatballs. 3. Cream of mushroom soup with cheese. Simple and quite filling. Bon appettit.
