As soon as the children had their chance to find the eggs, we collected them, peeled them and made them into deviled eggs, which we served for Easter lunch. They were very popular and disappeared in no time. Egg salad sandwiches are another good choice. Simply chop up the boiled eggs and mix with mayonnaise or Miracle Whip, a bit of mustard, sweet pickle relish and a bit of finely chopped white onion if you like it. Dill can be added to give it a little extra tang.

Egg salad and Deviled eggs are what we usually do too. We also slice up the eggs and use them for garnishes on salads, and Danish open faced sandwiches. There are loads of wonderful things to be done with hard boiled eggs. Cut one in half, put a little sour cream or mayo on the halves, and put some caviar on top. YUMMY!!

My son hates hard boiled eggs and even though I tried to talk him into coloring real eggs this year he still wanted the plastic egg's filled with jelly beans & chocolate candy wrapped in foil. I miss dying hard boiled eggs but he refuses them each year. I know if we ever dyed the hard boiled eggs for Easter me and my husband would be eatting all of the hard boiled eggs!..LOL.. I remember using leftover boiled Easter eggs in Tuna Salad and chopped them in Chef salads . My mom use to do this when I was a kid..Oh, and we use to do the egg salad and deviled eggs also
