what is ricotta cheese

There are many different king of cheese, one of the cheese that facinate me is Ricotta. when one mention ricotta one thing may come to mind is probably classic Italian Lasagna. technically, ricotta is not a cheese at all, but a cheese by product. Its name ricotta means cooked again. Ricotta is made from the whey drained from such cheese as mozzarella, provolone and other cheeses American ricotta is generally made with a combination of whey and whole, low fat or skim cows milk. Ricotta is a flesh soft snowy white cheese with a rich but milk, slightly sweet flavour. The texture is much like a grainy thick sour cream. It is naturally low in fat. It is also low in salt, even lower than cottage cheese. Since Ricotta is made from lactose rich whey, it should be avoided by those who are lactose intolerant. I think that this cheese should be loved by people who is health conscious.

You are correct at these informations but not everybody likes to eat cheese. I like cheeses while my younger sister doesn't eat cheese or drink milk at all as she has lactose intolerance with milk. I love cheese especially Brie and Mozzarella cheeses. However, there are some cheese that I don't eat such as Feta and Bleu cheeses as I find the taste too awful for my palette. In my country, Ricotta cheese is not widely available and quite expensive. The popular cheese that is commercially available is Eden cheese made by some dairy manufacturers like Kraft.
