Best things to infuse olive oil with?

I love to cook with garlic infused olive oil. I think rosemary infused olive oil works really well for roasting potatoes in too.
What are you favorite things to infuse oil with?

We have so much olive oil and so many fresh things to infuse with it, here are some idesa. Citrus fruits, either orange or lemon, add the peel to the oil. Olive oil infused with basil, with oregano, with thyme, with peppercorns, with mint, with fennel, or lavendar. When they are mixed store in a cool and dark area. The infused oils can be used for cooking, with bread, or as a dip for raw vegetables, my favourite infusion is definitely basil.
