Rag and Bone Men

Why are rag and bone men called rag and bone men? Me and my sister were just chatting and she said she could understand the 'rag' bit, but what about the bone bit? Do you know why they're rag AND bone men?

I think that they collected bones to grind down for bonemeal and to make glue Dory. I can remember a Rag and Boneman coming when I was small. I don't think that we ever gave him anything though.
