A Cheap Healthy Meal That's Fast

Both hubby and I are unemployed and I'm always trying to prepare cheap tasty meals. The other day I was thinking of what we had for dinner when I was a kid. Mom was always frugal because money was tight. At that time we had salmon patties, pork butt, and chipped beef. Well as you know those are all fairly pricy now. But I thought "tuna" is cheap, tasty, and healthy. So I took a small 5-6 oz. can of tuna. Drained and flaked it. Put it in a bowl, added 1 egg, a small squirt of mustard, a small amount of chopped onion, bell pepper, celery. Some garlic powder and enough bread crumbs to hold it all together. Aprox. 1/4 cup or less. Mix well. Makes 2 hamburger size patties. I cook these in my iron skillet with just a drop or 2 of oil. Cook for a few minutes on each side until brown. Serve with veggies and a simple garden salad. The patties are also good as sandwiches on sandwich rolls. You can also top them with cheese or make a sauce to go over them. Hubby and I really enjoy these and have them atleast once a week. Tuna goes on sale regularly or can be purchased cheap at such stores like Aldi's. I do prefer the tuna packed in water instead of oil.

Hey, thanks for the suggestion. We have all of these things except the celery, so I might try this right now.

That sounds really good to me. Tuna is also good on an english muffin, and sprinkled with cheese and then baked in the oven just until the cheese melts. Mmm Mmm, and also very economical.

I've done something similar to that, but I didn't use the celery or peppers. Instead I put in onion and dill pickles, then fried it and it was pretty good. I think I'll try your way next time.
Another cheap tuna dish is a sort of chowder. You dice potatoes and onions and cook them until tender, then add a can of evaporated milk and a small can of tuna without draining it. Salt and pepper to taste. One small can of tuna stretches to 6 to 8 servings like that.

Other than an occasional tuna salad I don't forsee my household using too much tuna. Hubby doesn't like it and other than tuna salad I had no idea how to make it really. Thanks for your idea on making some tuna patties.

Tuna is something you can have from appetizers almost to desserts
. I make a tuna loaf with tuna, eggs, fried onions, bread crumdbs and white sauce. I add some grated cheese on top.
I also boil potatoes and make a white sause withh tuna, Por it over the potatoes YUMMYY!!!
I like tuna in oil but haven´t had it in years
. Tuna in water is a lot more healthy.
I also make a tuna mousse for guests.
It´s 2 cans of tuna, 1 plain yogurt, some mayo, diced green onions. Then you use 1 envelope of unflavored gelatine and half a cup of hot water. Put everything in a blender and then to the fridge. You can serve it over lettuce.

Sounds pretty darn good,... I usually make tuna w/ miracle whip dressing , celery, red onions. I put a slice of melted american cheese a couple strips of bacon..
all on sourdough toasted bread...its pretty awesome
now your making me hungry...lol
