What do you make with your leftover thanksgiving dinner?

I know that we are having both turkey and ham. What do you make with the leftovers? Any good recipes or ideas that are different?

We pretty much survive off of turkey sandwiches for about a week. The usually aren't too many other leftovers.

I take the meat of the bones and put the carcass bones and wings in a big kettle with water, bay leaf, salt and peppr some celery and a carrot and half an onion. I boil it up let it cool strain it and throw out the vegetable. I put it in the fridg over night and take any fat off. Then I either freeze the broth for future soup or make turkey noodle soup by boiling up the strained broth and adding fine noodles. White meat: I make turkey sandwiches for lunch. Dark Meat: I buy two unbaked pie shells. Cube the dark meat and some of the white meat slightly fry a small onion add a cubed potatoe a small can of peas drained a diced carrot and a bit of the turkey stock to make a thick stew add a sprinkling of flour and do not cook until completely done. Fill up one of the pie shells and make the other one into a lid, cut vents into it and bake as a turkey pie.Bake at high heat for about 10 minutes then turn down heat to 350 and bake until crust is golden and juice bubbles out a bit through the vents. It makes another meal. Ham: I slice some for sandwiches, ham and mustard I cube some and make a western sandwich, another meal with a fresh green salad. So for four or five days I have new delicious meals that do not taste of leftovers.

We like to grill the meat and them throw it in grilled cheese sandwiches. Then you have a turkey or ham melt! :) But also, regardless of ham or turkey, it also tastes great in omlettes!

There are all kinds of things you make with leftovers. Scalloped potatoes for the ham Cassaroles are easy to make with leftovers. Take some turkey, cube it up, add some rice and vegetables of choice..YOu have a whoole new meal. Ham you can fry it up and and add it to a plate with eggs and grist for breakfast. Or take a bagel, english muffin or other breakfast bread....add an egg, add a slice of ham and cheese...Instant breakfast..These you can freeze to heat in the mircowave as you go. Turkey...You can cube up,add vegetables and turn in to a turkey pot pie. Or Turkey and biscuits. See what I mean. The possiblities are endless.

Mine is a simple one; every year I look forward to a turkey on white with Miracle Whipe with salt and pepper. My mouth is now full of saliva just from thinking about it. HMMMM TURKEYYYY
