I have used Adobe Photoshop quite a long ago, since my high school. But I never have used Adobe Illustrator yet. According to me, the difference from them is the image for editing. I have used Photoshop so I can tell you that it edit for bitmap image purposes in major. Though we can still edit bitmap image in Photoshop, but professional seems prefer the exact program for the proper object.
On the other hand, Illustrator is the program to edit vector image. I don't know if a vector image editor can be used as an bitmap image editor. But as far as I know, editor which specialize in vector image will have limited feature to be able to edit bitmap image.
Hope this will help you.
