MY version of Colcannon

I have been wanting try this, there are a million different ways to make it. I picked up a corned beef so I thought I would give colcannon a try. I boiled some potatoes, sauteed chopped cabbage in olive oil, put them together and mashed them with butter and hot milk. It tasted good, I could have added more cabbage I was just a little nervous how it would taste. I only used about 1 cup of cabbage to about 2.5 lbs of potatoes. Have you ever made colcannon? How do you make yours?

I've never even heard of colcannon, so I definately haven't made it. But since I have several cabbages growing in my garden, maybe I'll try your recipe, when the cabbages get harvested. Just mush potatoes and cabbage together? Now I've done that before... (Good morning, Laglen... What are your plans for this, once again, warm Saturday?)

Way too ambitious for me. I think I'll go to the farmers' market and see if anything is in yet. I need some fresh produce... Have a great day.

Thank you and you do the same, I could use some fresh home grown produce, I am so sick of the grocery store watery stuff. I REALLY want a tomato sandwich. A real one. That tastes like tomato

I'm going to have ripe tomatoes from my garden very soon. The patio plants I bought have done really well in spite of the weather. (I'm already back from farmers' market. I bought spinach, chile, and onions...that's all that was ready, except for some tomatoes, but they didn't look that good, so I passed. I'll be up for home-made bread later this summer :})

Never heard of it. Sounds kinda like shepards pie. Is colcannonIrish?

Ye sit is. not really a shephards pie, more like mashed potatoes with extras. You can add ham, but mostly potato and cabbage. It was pretty tasty.
