Need Inexpensive Side Dish Ideas or Recipes

We have these really good friends and the husband is throwing a surprise party for his wife at our house. He has asked me if I would handle doing all the food for the party which I don't mind but is food budget is really small, so I need some ideas for inexpensive side dishes that I can make a lot of, there will be about 40 people at the party. I am baked chicken as the main entree. Any suggestions, or recipes would be very much appreciated.

Potato salad is pretty inexpensive. Actually a salad isn't too bad either, depending on what is in season. Green beans and several other kinds of vegetables might go good too. One of my favorite, easy and inexpensive dish is hominy and cheese. Put a couple of cans of hominy in a casserole dish and dump a jar of cheese whiz on it and bake it until it's good an hot! I love that one!

You can get the store made potatoe salad in large quantities for pretty cheap. If you have a Tom Thumb nearby, their potatoe salad is pretty decent.

Hi If you would like to try some vegetarian dishes, then here are some recipes for you: I)Stuffed Eggplant Ingredients: 6-8 small eggplants 1/4 coconut, grated 6 garlic cloves 1/4 inch ginger piece 4 red chilies 1 teaspoon(s) coriander seeds 1/4 teaspoon(s) cumin seeds 1 teaspoon(s) jaggery 1/4 teaspoon(s) turmeric salt to taste Oil for frying Method of preparation: 1. Slit eggplants in quarters leaving 1/4 inch near the stem. Grind together all the remaining ingredients into a fine paste. 2. Heat oil in a heavy-bottomed pan and fry the ground paste till brown. 3. Stuff the eggplant with this mixture. Cook covered with half cup water till tender. Garnish with chopped green coriander leaves and serve. Serves: 4 II) mashed potatoes Ingredients: 2 medium-sized potatoes, sliced thin for quick cooking 2 TBS fresh orange juice ½ tsp garam masala (hot spice mix) 1 TBS extra virgin olive oil salt and white pepper to taste Directions: 1.Bring lightly salted water to a boil in a steamer with a tight fitting lid. 2.Steam peeled and sliced potatoes in steamer basket, covered, for about 10 minutes, or until tender 3.When tender, mash with potato masher, adding rest of ingredients. Serves 4

I would say salad weather it be with various veggies or even just salads like egg or various pasta salads. Pasta salads are going to be very inexpensive. You could do some sort of flavored rice (I use dry bullion or left over packets from ramen noodle) with some small veggies in it like shredded carrots, onion, and peas or whatever. A veggie tray is usually a hit around our house.

I already tried to post an answer once, but it didn't seem to show up, so here I goes again! I was thinking that you could make some Velveeta Bean Dip. That is fairly inexpensive and people seem to like it. Serve it with some tortilla chips. I was also thinking you could make mashed potatoes since potatoes are so inexpensive. Macaroni and cheese is cheap too if you get the store brand. Maybe some sort of side item with Jello in it. Jello is pretty cheap. I hope these ideas help.

I have a few ideas. One of my favorite appetizer is so simple. The only ingredients you need are tortillas, cream cheese and salsa. You soften the cream cheese and mix in the salsa until it tastes to good to you. Spread the mix onto the tortillas and cut the torillas into bite sized pieces. Chill until the cream cheese hardens again. These are so yummy. Another easy one is to get croissant rolls and put cheese and ham in the middle and then bake according to the package directions. I really like those as well and they are very tasty too. Rotel dip is always a great choice as well and you can find all kinds of varieties on that recipe online. Check out allrecipes.com or recipezaar.com I believe on both of these sites you can put in ingredients you want to have, and they will pop out recipe ideas. Oh, twice baked potatoes go great with baked chicken as well.

Lets see good side dishes would be hamburgers, hotdogs, and even shish kaboobs eh dont think i spelled that right.. Anyway fruits on a stick are good I have seen that before. If you need any more ideas perhaps you can run a survey from the guests themselves to get an idea of what they like. erm nevermind...maybe that isnt such a great idea if you have an budget now that i think about it. Oh chips and other junk food is good and cheap for a party. Doritos, potato chips, etc. Maybe even a large cake the options are limitless. You can buy like maybe I dont know 4-5 cake mixes and make 3-4 cakes with them. Thats pretty cheap and shouldnt completly empty your pockets.

like mashed potatoes? french fries? potato wedges are always good. what about garlic bread too?
