adaptations from box cake mixes

As a bit of a spin off of my cake discussion I was thinking what do you fellow bakers do out there to make that box of cake mix into a more delightful or unique cake? A co worker told me about adding a box of pistacio pudding to a white cake mix and OMG it is awsome! It tastes pretty good even with out frosting. I'm even thinking maybe splurging w/ some marichino cherries diced in the batter with it next time. I also did a recipe that was a chocolate mix and you added a box of chocolate pudding mix, chocolate chips to it and it had a couple other changes to the basic box recipe, it was quite tasty. Though I did mess it up because of all the extra ingredients the springform pan I use was too small to handle all the batter once it started to bake, looked ok when I poured it initially into the pan. I omitted I needed a pan double the size (though I used it for the one I mentioned before this one w/o trouble)....oops that was a tasty mess though

It's pretty easy to take a yellow cake mix and make a pineapple upside down cake! Just follow directions on any recipe for placing the pineapple, brown sugar and butter mixture on the bottom of a pan, then add the yellow cake mix. When done, instant upside down cake! Been a while since I've done it, that's why I can't remember the exact order ...lol.

Might have to try the pistachio pudding one. Do you add actual pudding or just pudding mix? I've never really done anything creative with cake mix, except I've made cookies with it once or twice instead of cake. The cookies were pretty good, but really soft and flat.

The pistachio one you make the cake mix according to directions and just add the box of dry pudding mix to it, bake and then frost w/ cream cheese or vanilla frosting.

Nope not at all. I know I was like what else needs to be added? And I just tried it and it was fine, just watch the bake time of course.

That doesn't make it dry at all? I know usually when it comes to baking you have to have the perfect ratio of dry to wet ingredients, otherwise it doesn't come out right.. too doughy or too runny. I might try it sometime anyway, sounds really good!

I have a couple of recipies that are for bars but the initial ingredient is the cake mix..my mom used to make some awesome bars....a white cake mix with cherry pie filling it it....then a glaze..so yummy!

I add rum to my butter yellow cake mix. not too much but just enough to give it a nice flavor - lol

One of the biggest substitutions that I've made in boxed cake mixes is that I will put in applesauce in place of the oil in the recipe on the box. This makes the cake better for you, but it doesn't take away from the moisture of the cake when it is finished. I've also occasionally thrown some chocolate chips in with the mix to make a chocolate chip cake. Other than that, however, I've never gotten adventurous when I've been making a cake. I think I might need to experiment a little bit more.

What is the ratio between the apple sauce vs oil? Or do you use the same amount?
