Local unique food

Here I can find many different international food; but I'd think they are popular enough to be available outside where they were originally came from. I am sure some food exists somewhere that never leaves its place of origin. One would have to actually go to the place to get it; or it is known only by the locals. Actually, vegemite could be one of those kind of food. I've never heard of that yeast extract prior to coming to Australia where people grew up with it. Any other such unique food?
