I Made Some Cake Balls Today

The cake itself came out fine, I mixed the chocolate cake crumbs with some chocolate icing and some peanut butter. I guess I didn't use enough PB cause it is not very peanutty but I used at least half a cup of it (with half of the cake from a box mix). The other half of the cake I used as a one layer Cmas tree chocolate cake. For the coating for the cake balls I had planned to make some vanilla and chocolate candy coating, but after seeing how fast it used up my vanilla candy chips I thought I'd try another way with powdered sugar and milk icing. Bad idea. The first idea was very sweet & dried too fast, and the powdered sugar kind soaked through the cake. So I'm guessing I will have to try the chocolate chips next if I do it again cause I wanted the rest of my candy coating for something else. Have you ever made those type of cake balls or truffles. Something like cake balls without the lollipop stick.

I used a regular box of store bought deviled food chocolate cake mix and made it according to the instructions and put it in two layers of a cake pan. I had two christmas tree shaped foil pans from last year that I used but you can use any kind you have. After the cakes were done, I saved one layer and put it into a big bowl, break it up alittle with a spoon or your hands, I didn't have to wait til it cooled. I put in about half a tub of chocolate icing (you can use 1/4 of a tub like I only had left too and it came out fine with that), and about 3/4 cup of smooth peanut butter (1/2 a cup was too little). Mix it up so it's distributed evenly. I thought mine was actually mixed to much as it was kind of "wet" but it was actually fine. I then rolled then into meatball type of shape, froze them in the freezer for maybe a few hours so they would take shape better when dipped in the melted chocolate. I melted my vanilla chips according to the instructions (I got mine at the dollar store in little bags), make sure it was melted enough so it was thin (I discovered the thick melted candy wasn't easy to use. I have to get the hang of it more as they were not covered perfectly. I think the cake pops would actually be better to handle with the candy coating. Stick lollipop sticks in them before doing the coating on them so you can turn them easy in the coating and then put them on a sheet of waxed paper to harden. Mine didn't need refrigeration to harden but the chocolate chip candy does. I have seen the peanut butter balls too and almost made those. I might still try them another time.
